i've tried them all when i visited HN last year. Overall, they were delish and scrumptious.If only they were less oily. Out of the three dishes, i love fried pho the most. The goodness of fried stuff was just irrestible Pho cuon was okay, taste very much like spring roll IMO>

Down south, we call pho xau, hu tieu xau. It took me so long to make the connection when my bf was asking me to eat and I wasn't sure what it was

haha I know them as that too. When I first read the names, I got really confused because I wasn't familiar with the names.

You can definitely buy them at Little Saigon (SoCal). Whenever I'm hungry for some pho xao/hu tieu xao, I usually go to Hoa Binh. So delicious~~
