Simple Mini Cheesecake Recipe scrumptious little pieces of heaven (easy to make too!!)

i want to share this simple and delicious recipe with you guys. i've probably used this recipe over 20 times and each time everybody eats like 2 or 3 of the mini cheesecakes, they are gone in no time. it's amazing because they would never guess how fast and easy it was to make. compared to baking a full cheesecake, this is fool proof. try this recipe and tell me how it turns out!! (sorry this pic, does not do justice to the taste, hehe)



ingredients:
1 pack of nilla wafers or graham cracker or digestive cookies (add a pinch of cinnamon to the mix)
2 packs (8 oz) of cream cheese (you can substitute 1 pack with low fat cream cheese without loosing the flavor)
3/4 cup white sugar
2 eggs
1 tsp vanilla extract
1 can cherry pie filling, blueberry, or whatever suits your fancy (optional)
1 pack of mini muffin tin cups (w/ the paper lining) - you will probably use about 12-16 cups depending on how full you fill the cups



instructions:
1. preheat oven to 350 degrees F
2. crush the wafers, and place 1 tbsp of crushed wafers into each cup.
3. beat cream cheese (make sure the cream cheese is at room temp, makes it much much much easier to mix and also makes the consistency better), sugar, eggs and vanilla until light and fluffy
4. fill each cup with this mix until 3/4 full
5. bake for 15-20 minutes, let cool then stick in fridge for a couple of hours to let it harden
6. top with a bit of cherry pie filling (optional), you can also used fresh fruit and whipped cream!

i think my auntie makes this recipe!!! except instead of crushing the wafers, she puts the whole nilla wafer in the bottom.

this is kind of scary.. i was just eating this a couple days ago. EXACT same thing... the muffin wrap and cherries and cheescake. looks EXACTLY like that. i ate it from my mom's customer, you are not that customer are you?? lol. but it was definitely good.

how long does it take for these to melt?
cause i've made cheesecake related desserts before and one in particular was a disaster because it would melt
