I don't know what else unbranding will alow you to have on this phone, but i remember my friend with this phone, i think, asking me how to set mp3s as ring tones on this phone and the answer so happens to be unbranding it.
All I know it, I usually like unbranded phones better. It less cluttered, a difference if you compare it to a branded one

I believe it is the same thing as getting your phone unlocked. The minor difference is that it will get rid of all the things ie: on the phone / on the UI which has the company's brand on it.
Example:
-Sometimes when you buy phones from carriers, the brand seems to be 'all over the place', like on the phone itself, on the welcome screens etc etc.

^ damn you beat me to it ktown. Unbranded means they go into the phone's software and remove all logo's, wallpapers, screensavers etc that has the cellphone company's brand on it. Afterall, it's annoying to have a "personalized" phone where you see the T-mobile or Cingular logo everytime you turn the phone on or whatever. And yes, it's unlocked as well.

Pretty much the same thing as unlocking it. GO FOR IT.
Cause it's easier to sell lol.

The seller is most likely going to unlock it with Wotanserver or Davinci. It costs about $10 to do it. If I were you I would do it myself since I know I'm unbranding it rather than let someone else do it and have a 50/50 chance of it not happening. Who knows, I just don't use ebay for expensive stuff.
Like some said:
Unbranded = No Provider logos and etc. Basically it'll look brand new from the manufacturer.
Unlocked = No provider and unbranded(most of the time).
The person should not be unbranding the phone if it is unlocked already. You should ask where she/he got it from because I understand that Vodafone(European provider I think) sells it and the person can unlock it. Maybe it's me, but I rather get an unlocked phone that doesn't need to be unbranded.

It means the phone is unlocked and it won't have the logo of the provider on it.
So say you wanted a Motorola PEBL from Fido... if you were to get in unbranded, it wouldn't have that Fido logo on the bottom of the phone:

Thus it looks cleaner and you're not whoring out the name of your provider
