but i'm guessing the sun needs to be directly behind your subject
and the subject shouldn't be completely covering the sun

well, to a certain extent, it's true right? put the dial in P mode and your dslr will almost always take better pics than your point and shoot. Add IS to the lens, and it compensates for yet another photographer imperfection. etc etc. this is not to say a camera can work magic, but they do tend to take better pictures without the photographer having to be an expert.
also... i hear they're going to come out with 2 versions of the 5D, one will be cheaper than the current 5D and allow enthusiasts to enter the FF world without costing an arm and a leg. the other will be more expensive and add other features. just a rumor though...

i think nikon does a great job when it comes to entry level dslr market. they have products much more affordable than what canon provides, plus a better entry level body!! whether nikon or canon, i dont think you can really go wrong. however, i will say that if you intend on using telephoto lenses (long focal lengths usually 100mm+), then go with canon's. but if you like portraits and flash, nikon hands down.
i guess it's hard to determine what you will take pictures of, but im sure you have an idea of what you take the most pictures of. go from there, and also your budget.
i tend to tell people not to get the d40 since it can only handle a select list of lenses in the nikon lineup, but it doesnt mean it's a bad camera. it's just that chance are your skills will outgrow the capabilities of the d40 faster than other camera bodies, and you may be left wanting more. which would mean having to buy another body. might as well get one without those limitations from the start and grow into it.

but if u want more flexibility for entry level dslr, canon's XT or XTi would be good to choose from(but definitely try holding one first, i find their body somewhat small and thus it takes time to get used to). what is your budget anyway?

I was actually thinking between the Rebel XT and Nikon D40 but I saw that the Nikon was less pricey! I live in Canada and I found the Rebel XT body only for around $650. I found the Nikon D40 with 18-55mm lens kit for the same price. The Rebel XT with the 18-55mm lens kit was $774. So I wasn't sure if I would be using the lenses because if I did, then the Nikon D40 with the lens kit is quite a bit cheaper than the Rebel XT with the lens kit. My budget is around $700 which isn't all that high for DSLRs but i don't really want to spend too much at entry level.

If I had to choose between D40 and XT I'd get the XT hands down. I heard not so great things about the D40 and I don't like how you can't use as much lenses with it.

is this is canadian dollars? if you dont mind using a refurb'd unit, you can find a cheaper one here ($500):

call them up and negotiate your way into getting an extended warranty on it. this way, if something goes wrong, you can send it in and have it fixed free/cheap.
also, i have a canon kit lens 18-55 EF-S (non USM) that's picking up dust nowadays. just your average kit lens... nothin good or bad. im willing to part with it for $50 US (+ split shipping costs).
if you prefer to get something new... that's a tough one. if you can gather up just a little more funds, you can get the canon. or the d50 (which i think is much better option than the d40). but if you need one now and you really want to start as soon as possible, d40's your best bet aside from going used.
