Suppose I'm undeclared but I want to transfer into either Bio or Architecture later at UC Davis or UC Irvine...I kinda want to switch during my 1st year but my dad says it's hard? Since they're impacted...I'm just wondering how hard is it to transfer majors?

Usually it's only difficult to transfer into an engineering-related major since they have a different standard for admissions (emphasis on math and science achievements). Other than that, you shouldn't have any problems with selecting the major of your choice in any UC College of Letters and Science.

it shouldnt be too hard unless you're in the engineering field [like masterPark said above]
