what is the professional name for the people that mix and put together the different instruments and stuff for songs.. ya know what im talking about?... sorta like what DJ Tukutz does..? but like behind the scenes? they put the music together?

I would probably call them "producer". They're not actually DJ's unless they know how to do turntable, etc.
It's annoying how I see some dudes call themselves dj's just because they know how to use Fruity Loops. =\
