I have a question. When working with mushrooms - just average whole, button mushrooms - do you have to peel off the top layer of skin?
You know how the top of mushrooms are kind of.. slick? If you take out the stem and peel the top layer of the mushroom head, you get a rougher feel to it (and a slightly smaller mushroom, lol).
I'm cooking stuffed mushrooms right now, so comments would be great for this recipe and for future use of mushrooms. ^.^
Also, any tips on washing/cleaning mushrooms?

I never peel off the skin... I usually just rub the mushrooms under water with my hands. I also seen a mushroom brush at Williams Sonoma.

so.. i realized that peeling just the inside of the mushroom heads (where the stem used to be), helps in stuffing them (or just using less of the mushroom stem in the actual filling could work, i guess). =_= it took me forever to try to get the filling inside.
If anyone wants the recipe, i could post it. ^.^
It's called, Mushrooms Stuffed with Turkey Sausage - from Healthy Heart Cookbook.
It's not really stuffed with turkey sausage.. you kind of make the "turkey sausage" using various ingredients. It's a really healthy, but delicious side dish. <3
EDIT.
Okay. This apetizer is not delicious. IT'S ABSOLUTELY MAGNIFICENT. MIND-BLOWING. PHENOMENAL!!! All for 2g of fat and 71 calories per serving. T________T Beautiful.
If anyone wants it, just ask and i'll post. I'll probably post it anyways maybe tomorrow or the day after. T__________T SO friiggin good.

Well, you don't necessarily have to peel the top layer of the skin.
It's still edible. But I peel it off everytime I use it (unless I get really lazy) because of my ocd-ness. Haha~
Annnd to wash/clean the mushroom...you don't want to run it under water.
Why? Because the mushroom will soak up the water and when you cook it, the water will only come out and make the food blah.
Also, mushrooms already have water in them, so by washing it under water will only give you more water than necessary...
So, it's best to take a damp cloth/paper towel and just wipe it.

I never have my mushrooms come in contact with water; I just wipe them clean with a cloth.
