I made this for cooking class as a final project. Hope the instructions aren't too confusing

Mexican Calzones

Ingredients

1 can refridgerated pie crust
1lb ground beef
1 pack taco seasoning
1/4 cup water
1 can green chillies
1 cup chedder cheese

Directions

1. Preheat oven to 425.
2. Brown the meat in large skillet
3. Add taco seasoning, water and green chillies and stir.
4. Lay out the pie crust onto a cutting board. Cut it into 4 circles, then cut those circles in half. (You should have a pair of 4 half circles)
5. Take 1/2 cup of the meat mixture and pour it on one side of the pair.
6. Top the meat mixture with cheese, then dampen the edge of the crust with eater.
7. Take the other half of the pie crust and place it over the meat mixture. Then crimp the edges together with a fork.
8. Place it in the oven onto a baking sheet and let it bake for 15 mins.

Yield: 4

Banana Nut Muffin

INGREDIENTS
3 cups all-purpose flour
2 cups white sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
2 eggs, lightly beaten
3/4 cup milk
2 teaspoons vanilla extract
1 cup melted butter, cooled
2 bananas, mashed
1 banana, chopped
1 cup granola
1 cup chopped walnuts
1 cup shredded coconut
1/4 cup banana chips (optional)
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Line 24 muffin cups with paper liners.
In a bowl, mix the flour, sugar, baking powder, baking soda, and salt. Mix in the eggs, milk, vanilla, and butter. Fold in mashed bananas, chopped banana, granola, walnuts, and coconut. Scoop into the prepared muffin cups. Sprinkle with banana chips.
Bake 25 minutes in the preheated oven, or until a knife inserted in the center of a muffin comes out clean.

i suggest using 1-1 1/4 cups of sugar if you don't like sweet foods & it's healthier too. also u can add 4 bananas and use 1-1 1/4 cups of sugar because the bananas are sweet.
& i used 2 cups of margarine instead of butter
and i sifted the flouer,sugar,baking powder,baking soda,& salt. it's a big difference! haha
and it's really good :]

HOME-STYLE QUESADILLAS:

- One burrito wrap
- Green onion, chopped
- Green pepper, chopped
- Onion, chopped
- Tomato, chopped
- Taco seasoning mix OR chili powder
- Shredded cheddar cheese
- Non-stick cooking spray


INSTRUCTIONS:

1. In a medium-sized skillet, sautee the green pepper, and tomato on medium-high setting. Sautee until lightly brown.

2. Add the tomato and green onion for an additional minute, or until the green pepper and tomato becomes a golden brown. Turn off heat.

3. Pour the contents into half of a burrito. Top with a pinch of taco seasoning OR chili powder and lots of cheese. Fold in half.

4. Place the burrito in either the same skillet or another skillet. On medium heat, heat both sides until the burrito becomes a golden brown or the cheese has melted. Turn off heat.

5. Move the burrito onto a plate and cut in half. Enjoy!

Basic caramel sauce
My own recipe. xDD It's so yummy! Can be used as a topping on ice cream, drinks, or mized with milk for a caramel drink.

Ingredients:
1/3 c butter [unsalted]
1 2/4 c granulated sugar
1 c powdered sugar, sifted
1 c all purpose cream / light cream
1/8 c brewed strong coffee [optional]
1 tsp vanilla

Equipment:

Heavy saucepan
Wooden Spoon
Whisk
Hand mixer[optional]

Procedure:

1. Put the butter and sugar in the pan. Turn on to medium heat. Don't do anything to it till some parts turn brown. When that happens, stir with wooden spoon. Let sit. Do not stir while the sugar is still melting or you'll get hard blobs that are hard to melt. Let sit until the mixture turns into a rich brown color. Lower the heat. There would be a thin layer of melted butter over the caramel. You can choose to leave it be or skim away a bit if you don't want it to be that buttery.
2. Gradually add the cream to the mixture. Do not chill the cream beforehand or else it's gonna get scary. >_< Use a whisk[coated with melted butter so it won't stick] to incorporate in the sugar mix. Add in vanilla and coffee. Mix well.
3. Gradually whisk in the powdered sugar[you can use a hand mixer if you want] into the mixture. Sift the sugar so you won't get lumps.
4. Remove from heat, stirring constantly. Transfer into containers. Let cool before storing.

Yields about 2 cups. Keeps well stored in glass jars in the fridge for about 1-2 weeks.

This is my own recipe... I made it up when I was about 11, so it`s not very hard to make but it's really yummy. tongue.gif



Mexican Garlic Bread (similar to Quesadillas)

Serves 1- unless you make more of them.

Ingredients:- grated cheddar or mozzarella cheese; about half a cup (can be low-fat)
- two flour tortillas (can be low-fat)
- tomato paste/pasta sauce, such as Paul Newman's or Barilla or Leggos
- 1 clove of garlic
- margarine or butter (margarine has less fat so it's better if you're health-conscious)
- salt
- pizza topper OR black pepper OR any of those other sprinkle-on garnishes/seasonings (Masterfoods has a really good range)
- parsley or basil if you want

Preheat a griller (or an oven, if you don't have a griller) but don't make it any less than 180 ºC (356 ºF).

Method:
1. Spread out one tortilla on a workbench, plate, tabletop or chopping board. Rub a clove of garlic over the surface of the entire tortilla.
2. Spread margarine or butter evenly, but not too thickly, over the surface facing upwards ONLY.
3. Spread tomato paste over the same surface. Sprinkle on a tiny bit of salt.
4. Sprinkle on the garnish/seasoning, topper or pepper. Add basil or parsley if you want.
5. Evenly sprinkle cheese all over the surface, making sure that none goes over the edges of the tortilla.
6. Place the other tortilla on top and press it down gently and evenly.
7. Place the whole thing in the oven or griller. Just watch it until you can see the cheese melting and the top turning slightly golden. It should take about 10-15 minutes.
8. EAT!!! (it's easiest to eat if you cut it up just like a pizza).

Scones

Ingredients
2 cup Flour
1 tsbp Baking powder
1/4 tsp. Salt
1/4 cup Sugar
1/3 cup Butter
1 cup Whipping cream (if you don't have whipping cream, then you use can milk instead)

Cream (optional)
1/2 Cup Whipping cream
1 tbsp. Powder sugar
1 tsp. Vanilla extract

Directions

1. Combine the dry ingredients together and mix it well.
2. Place in the butter, and use a pasty blender (use a fork if you don't have one) to blend the butter with the flour. Basically you want the butter and flour to mix well and make sure that there aren't many small clumps of butter within the flour.
3. Then add whipping cream and stir until moistened.
4. Take the batter on a lightly floured surface; kneed it 5 to 6 times.
5. Divide the dough into 3 balls, flatten it to about 1/2 in thickness; cut into 4 triangles each.
6. Place on parchment paper (or foil) on the cookie sheet.
7. Bake at 400 for 15 mins, serve with garnish and cream.

Directions for cream

1. Combine the whipping cream, sugar and vanilla.
2. Beat it with an electric mixer until stiff peaks forms. (be careful to try not to over beat it)

Chocolate Zucchini bread (YUM YUM!) --i got this recipe from my friend, it tastes great and easy to make!

Ingredients

1 cup brown sugar
1 cup sugar
1/2 cup margarine
1/2 cup applesauce
3 eggs
1 tsp vanilla
3/4 cup of buttermilk
3 cup flour
1 tsp cinnamon powder
1/2 tsp salt
2 and 1/4 tsp baking soda
5 tablespoon of cocoa powder
3 cups grated zucchini
1/2 cup milk chocolate chips

***in place of buttermilk, you can do 3/4 cup of regular milk and 3 tablespoons of vinegar*** (let it sit for a bit)

Directions
1. Beat sugar, applesauce, margarine until dissolved
2. Add eggs, one at a time
3. Add buttermilk and vanilla using mixer
4. Add cinnamon, salt, baking soda, cocoa. Mix using mixer.
5. Add 1 cup of flour alternating with 1 cup of zucchini
6. Fold in chocolate chips
7. Pour into powdered (greased) 9x13 pan
8. Bake at 350 degrees for 1 hour

ENJOY, it's absolutely DELICIOUS. I promise.

GREEN TEA ICE CREAM RECIPE!

Ingredients:
· 200ml milk
· 2 egg yolks
· 2 tbsp sugar
· 200ml heavy cream
· 2 tbsp maccha green tea powder
· 100ml hot water

How to Cook:
1. Lightly whisk egg yolks in a pan.
2. Add milk and sugar in the pan and mix well.
3. Put the pan on low heat and heat the mixture, stirring constantly.
4. When the mixture is thicken, remove from the heat.
5. Soak the bottom of the pan in ice water and cool the mixture.
6. Mix hot water and green tea powder together.
7. Add the green tea in the egg mixture and mix well, cooling in ice water.
8. Add heavy cream in the mixture and mix well.
9. Freeze the mixture in an ice cream maker, following instructions of the ice cream maker.

Easiest way to make Green tea ice cream is to mix vanilla ice cream with maccha powder.

tuna tartar on wonton crisp w/ cilantro cream cheese (great appetizer)



this is a bad pic cause it was off my cellphone. but after you are finished with the product you can have a nice diplay of them =)

this recipe i made on my own for my garde manger final in class. i got 94/100 points on it. this recipe is made up of my own so the measurements are not exact so please always taste as you go. i dont use measuring spoons when taking finals or at work so this is about a rough estimate of everything.


Ahi Tuna (you can get 1/2lb or 1lb) (diced in small chunks about 1/4 inch) (RAW) do not cook or heat this up.
Green Onions (fine chop, use green part)
Sesame Seeds (about 2 tablespoons)
Soy Sauce (about 2 tablespoons, but add as you mix you dont want it too wet)(i like using low sodium soy sauce)
Sesame Oil (about 1/4 teaspoon)
Garlic (1 clove minced)
Orange Zest (3/4 teaspoon) (if you dont know what zest is its the peel of the orange u can use a spoon to scrape the orange skin)
Salt (dont really need it since soy sauce is salty go by taste)
Cilantro (1tsp minced)
Cream Cheese (1 package of block cream cheese, if you dont have a small mixer save yourself some trouble and buy the soft or whipped)(wanna leave at room temp b/c you want it to be soft so its easy to mix)
1 package of square wonton wrappers ( you can cut them into triangles) (i like to cut them in 1/4's on each square so i have tiny triangles)
tabiko and sushi ginger for garnish. (cut ginger into small pc and top on after everything is plated with a small amont of tabiko)

1. take minced cilantro and creamcheese and mix well (taste as you go you wanna have a nice monty cream cheese taste)
2. take tuna, green onions, garlic, orange zest and mix
3. add soy sauce as you go with tuna mix and taste
4. add sesame oil to tuna mix and taste as you go (the sesame oil is for a little taste but more for the tuna mix to shine =) )
5. you can add salt if you need
6. taste and place in fridge.

preheat oven to 350-400 you can watch them as you go they cook fast
1. take the cut wontons and brush them with sesame oil.
2.spinkle with sesame seeds
3.i like to place another baking pan on top of the wontons so they stay flat or you can shape them however you want.

1. take cream cheese blocks and minced cilantro and mix well. taste as you go =)

after everything is done.

1.take the cream cheese and put into a ziplock bag. force cream cheese to one corner and cut a small slit on the corner so you can pipe it out.
2. pipe a little but of cream cheese on top of the wonton.
3. take a small spoon and scoop a little bit of the tuna mix on top of the cream cheese
4.garnish with tabiko and ginger (you dont have to have tabiko.)

hmrm.. skimmed through this thread and found 2-3 green tea ice cream recipes.. thanks a bunch! i've been craving for some ya know. i just dont get why restaurants put green tea ice cream in their menus under desserts and when i try to order it, they tell me they dont have it.. tsk.

i can't cook or bake to save my life but it doesn't hurt to try. i'll make my ex-bf the tester.. he calls it, the death tester. LOL how crude. i also wann try teh kimchi fried rice.. but i don't dare.

& xmas is coming up soon. been craving for some gingerbread/snaps as well. yay.

KHAO NIAW MAMUANG (STICKY RICE WITH MANGO)
you need:
-4 large ripe mangos
-1 quantity of steamed sticky rice with coconut milk
-170 ml (2/3 cup) coconut cream mixed with 1/4 teaspoon salt, for garnish
-2 tablespoons dry-fried mung beans (optional)

procedure:
PEEL the mangoes and slice off the two outside cheeks of each, removing as much flesh as you can in large pieces. Avoid cutting very close to the stone where the flesh is fibrous. Discard the stone. Slice each cheek lengthways into four or five pieces.

ARRANGE the mango pieces on a serving plate. Spoon a portion of steamed sticky rice with coconut milk near the mango slices. Spoon the coconut cream garnish on top and sprinkle with mung beans. Serve at room temperature.

GARLIC BREAD SUBSTITUTE:

Items:
- approx 1-1.5 tablespoons of minced garlic
- approx. 1/4 to 1/3 cup of olive oil (extra virgin olive oil is welcomed)
- bread

procedure:
- get a small pot and cook the garlic until lightly golden brown
- add the olive oil and cook until oil has heated up to a simmer (not boiling)
- place in a small bowl or sauce bowl
- either dip the piece of bread or spread it on the bread and enjoy!

i usually measure all the ingredients by eye, so if you feel like it may be too much oil or garlic feel free to adjust..all i know is that its healthier than normal garlic bread and tastes exactly the same..

Recipe for Eggs.

Ingredients:

1 egg.


Method:
1. Crack the egg into a HOT frying pan. Make sure the stove is on and do not drop any shells into the drying pan or it's going to be some crunchy egg.
2. Give each side about half and hour for extra crunchiness, the stove must be on high to retain the crunchy affect.
3. Flip the egg. Becareful not to break it, treat it with care and respect. Or else it will turn into a bad egg.
4. Serve on a clean place, if the plate is dirty it may alter the taste of the beautiful egg that you have just have cooked.
5. Eat extra slowly, the crunchiness may over power the egg itself. But that is why my recipe is so unique.

tonight i made korean dakgolbi (spicy marinated chicken)
it turned out fantastically.

i used this recipe:

Ingredients for 4 people

(Expected Prep time - 1 hour 15 minutes, Cooking time - 5 to 10 minutes)

-Meat and the first seasoning

* Chicken Breast 500 g
* Refined rice wine - 2 tbsp
* Ginger powder - ¼ tsp
* Pepper 3 sprinkles

-Marinade sauce (mix these well in a bowl.)

* Gochujang - 3 tbsp
* Minced garlic - 1 tbsp
* Korean chili powder - 1 tbsp
* Korean soy sauce - 1 tbsp
* Dark brown sugar - 1 tbsp
* Korean yellow curry powder - 1 tsp
* ½ an grated onion

-Side ingredients

* 1 medium size potato (using sweet potato is more authentic, though I forgot to buy one, so I added potato instead)
* ⅓ of a medium carrot
* ¼ of a small cabbage
* 11 perilla leaves (so called sesame leaves, ggaennip)
* Fresh rice cakes (Garaeddeok) 400g (It is a lot, but we love the rice cakes. If you are using pre packaged ones, soak them in cold water for 20 minutes before you use them.)

1. Rinse the chicken in cold water.
2. Cut it into mouthful pieces.
3. Put it into a bowl, then add the first seasoning on top.
4. Soak for about 15 minutes.
5. While you are waiting, wash the vegetables, peel the skin off as needed.
6. Thin slice the potato (or sweet potato), carrot, cabbage, and perilla leaves.
7. Add the seasoning sauce into the chicken bowl, mix it well, and leave it for 1 hour.

Cooking

1. Pre-heat the wok for about 20 seconds.
2. Put some olive oil in the wok.
3. Put all the vegetables into the wok and add the meat on top.
4. Stir them well while it is cooking and you can start to eat when it is cooked.
