Do any of you boil tapioca in a water bath? And if you have how well has that worked for you? I need to make a good amount of it to serve and I definitely don't want to screw up the bag of tapioca that I have haha
So do any of you recommend using 2 pots to create the water bath?

Eh .. i don't use water baths to cook the tapioca. ^^;;
Normally what i would do is to just boil hot water in a pot, and just dump the tapioca in when the water is boiling. Let the pot(+ tapioca) boiled till the tapioca pearls are rising to the top, and then let it simmer till you get the texture you want it. Usually, I find the pearls are done when it looks shiny. Remember to also stir in between time or the pearls will stick to the bottom.
Ratio of water vs. bowls of tapioca: 3:1
but feel free to adjust the ratio, just to make sure that there are plenty of water for the pearls to cook with.
