How Do You Guys...? Make YOUR fried rice??

Don't know if there's another thread about this :X But that'd suck if there is :[[[


But yeah!! My mom makes her fried rice in a wok. [Because that's how us chinese roll -0-;; LOL]
First I think she cooks it in the rice cooker first, then puts it all in wok with eggs, and all that other good stuff.
But it turns out all soggy :[ well.. not soggy, but not as solid as in restaurants. She doesn't put as much oil in I guess :X


Well, I remember watching this cooking show [which I don't think was from Food Network :X]
And they were cooking some meat in a wok, and a pan to see which was better to cook food.
They didn't really cook it the way we do [People who have woks in their kitchens]
and they just left it there -0-;;? and after like.. 15 minutes, they took off the top and the meat was all
weird looking~ -0-;;?? and my mom was like... wtf, they don't know how to cook in a wok!
.... well.. she didn't say wtf, insert that with a cantonese phrase~ LOL.

So!
Do you guys cook in a wok, or a pan? :X

99% of the time we used wok. One of the things I learned from cooking is to thoroughly heat the oil in the wok before cooking.

As for fried rice, my parents only make them when there is enough leftover rice from the previous day. I am not a fan
of fried rice.

Here's their usual ingredients
-Leftover rice
-Some meat
-Corn, peas
-Oyster suace
-Soy sauce
-egg
-oil

the trick to making the rice not soggy or w/e is to refridgerate the rice overnight so it hardens
cuz when you cook fresh rice its all moist and new youre suppose to eat it right away and
basically fried rice is just leftover crap you have in your fridge... lol
soo yess...then just mix w/e you want meats, veggies, eggs, soysauce etc...

first i chop up the veggies relatively small...i only use three kinds of veggies, carrots, onions, and green onions
i stir up the carrots first with salt and pepper, and then the onions, and then right before i add the rice, i add the
green onions then i add the rice, and as for the eggs, i don't like to fry/scramble them with the veggies i beat
the eggs until it gets kinda foamy on top with salt and pepper and then after the rice is nicely incorporated with
the veggies, i kind of add the beated eggs over the entire thing and cook it until the eggs look done...this makes
the fried rice really..fluffy and less dried out...it's really good! you should try it! oh, and sometimes i like to add
diced chicken breast...mm...soo good...

When you cook your rice, put a little less water in than you usually would. Then it'll be drier and won't get soggy when you add the eggs n__n
To show my appreciation, I'll only beat them half to death.

Mine's usually done in a wok. It's easier to mix the ingredients that way. But since I'm in the UK, getting hold of a wok is too much hassle so I'm just using a pan. I love adding bacon to my rice.

one way you can try is to put oil in the pan, medium heat, and put raw rice in there and mix it up for 1-2 mins before cooking it in the rice cooker.
also use the minimum water needed to cook the rice. usually 1 to 1, rice to water ratio. maybe a even a little less water.

rice should come out dryer and not sticky. if the rice is slightly uncooked you can add the rice and some water to your wok and finish it there.

My mom uses woks making all dishes. I've never seen my mom make fried rice before, so I'm assuming she doesn't know how to? xD

yup, my mommy used a wok too...
she cook the rice in the rice-cooker
then she gather eggs, tiny shrimps, etc, and cook it with rice..
for me, i rather eat ham with rice...
i suck at fired rice..

I made Kimchi fried rice once, but I only threw in Kimchi after my mum made the actual fried rice. laugh.gif

i use leftover rice from the night before. fresh rice just doesn't turn out the same way, IMO.
i cook with a wok, always.

i use leftover rice. and yea i sometimes use a wok and sometimes a pan. lol depends on the quantity.

first i add in whatever ingredients (sausages corn blabla) then i add in the rice, then the egg, lastly salt and pepper. yup.

i use left over foods and i cook with a wok

first i fried the egg and then scramble/cut it into little pieces, and then i fried the rice (left over) + add sauce (black bean paste, soysauce etc) + add left over foods (chopped into tiny pieces) + add the previously cooked egg. i always gry the egg beforehand because it makes the rice soggy

Put the rice in to the pan (I don't really care if it was cold or hot) and pour the raw eggs on it and then throw whatever you want in there. Stir it up !

I usually do that tongue.gif And a little bit soy sauce after you're done. Fast. Hehe

I learned this from my dad.

Basically, you just get last night's rice out of the fridge, and loosen it up with a fork. Heat up a pan with around a tablespoon or two of oil, and some garlic. The quantity of the garlic depends on how much rice you're gonna put in.

When the garlic's cooked, put in your rice, and stir. Let sit for a while. Sprinkle some rock salt if desired. Stir again. Dont' stir too often. Let em sit for like 2-3 minutes before stirring again.

When you see steam coming out of your rice, it' s done. Tada~plain fried rice.


Sometimes we add some other stuff, too. Like eggs, spam, leftover stuff.

and for the seasoning? i use korean spices..idk what there called in english -___-;;

I once watched a top chinese chef on a cooking show making chinese style fried rice,and he was telling the audience about using overnight rice for better taste which is very true.wok is recommended but a big pan works well too..what he did was..
first add oil and heat up the wok
he than stir fry bites of garlic and onion on the wok
next,he add two eggs and turn off the heat..let the eggs cook with heat from the wok.this is to ensure the egg weren't overcooked.
next,when the eggs are semi-cooked,add rice into the wok..
stir throughly and let the eggs wrap around the rice before turning on the heat again..
after stirring for abit,add all the ingredients in,(carrots,peas,corns,chinese sausage)..or any of your favourite ingredient
stir all the ingredients in the wok throughly and add the seasonings(salt,soy sauce,chinese cooking wine aka hwa tiao wine)
the addition of wine is to enable the rice to "spread out" better..cook for a couple of minutes until everything is fully cooked and set it on the plate..

i make some bomb fried rice!

i like it sticky and fresh so i use fresh rice...
cook my meat ahead of time(beef, pork, chicken, shrimp, all 3! don't matter)
oil, salt,sodium- fried my rice...

add the eggs and onions...
soy sauce, oyster sauce, chilli sauce..
then some more salt if needed..
then at the end, green oninons..!
YUM!!!
