I typed a document, printed it out, but didn't save it. I'm guessing this was about 3 weeks ago. Is there any chance I can print another copy?

Text editing programs don't cache everything you type and store it anywhere.

scan it at kinkos or whatevas and then convert the scan back to document

There's no way that you can get it back unless you have a scanner.
The only way is if you closed it through Task manager or suddenly shut off your machine while working on it then it'll have an Document Recovery
or if you saved the file while writing it, it has an auto-save.
