Macapuno Ensaymada Recipe? Help pls? thanks

Hallo Soompi :] I love Macapuno Ensaymada A LOT. I've googled all over for the right recipe, but I can't seem to find it... I know macapuno is a kind of coconut, but I don't know where to get it... and I don't know how I would go about making ensaymada... can anyone lend me a hand on a recipe? I can try to find a picture of the it... the one I get from the oriental grocery has no cheese on top, btw. And I'm pretty sure it's a Filipino dessert.

OMG I love ensaymada so much, especially the home made ones. My friends make the best ones.

I don't have a recipe for you but you can get all the ingredients from your local Filipino or Asian grocer.

Is Macapuno different? The picture you have up there isn't the usual one I have. The one I ate yesterday has sugar and butter on top.

ohhh you meant the coconut powder stuff= Macapuno?. You can get it at the Filipino store xD If you want to we can go to the Filipino store sometime this week Kay^^

Ensaymada
Ingredients

* 3 1/2 to 4 teaspoonfuls of yeast
* 1/3 cup of lukewarm water
* 1 1/2 teaspoonfuls of white sugar

* 1/2 cup diluted evaporated milk or undiluted whole milk
* 1/2 cup white sugar
* 1/4 melted butter
* 3 egg yolks
* 2 1/2 to 3 cups unsifted all-purpose flour (after measuring sift flour)

* grated mild white or yellow cheese, white sugar, softened butter for top or filling

Directions
dissolve the yeast in the lukewarm water and 1 1/2 teaspoonful of white sugar. mix, then set aside until bubbly. mix everything together until well incorporated and smooth. transfer dough into a greased bowl, let rise for one hour, then form into a log, flatten out and fill with cheese and butter (optional), or just coil into a snail shape in a greased pan. if you are making individual cakes, divide the dough in equal pieces, roll into logs and coil or knot and place in greased muffin tins. let rise for another hour, then brush with butter and bake in a preheated 300°F oven for 25 minutes or until lightly brown. cool completely, slather with butter, dust with sugar and top with grated cheese, if desired.

thanks a lot you guys, and yeah that IS a weirder picture-- the ones I get from the store don't have cheese or anything on top, and aren't shaped that way, but it was the best picture I could find XD;

And Jinii, maybe we should go to the store ^^; omggg I wish I had had one yesterday TT.TT;

I thought macapuno was just a term for a young coconut? I think I read that somewhere. It'd be interesting to try to make it though...I love ensaymada...or any other Filipino desserts for that matter smile.gif

Macapuno = mutant coconut! It's basically a coconut whose genes short-circuited while they were still developing, thus leading to it bearing a fruit that tastes hella different from a regular coconut. I think the English name for it is Coconut Sport?


You can get bottled macapuno at any Filipino store around your area. They should have it.
