Koi Kaze - The premise may scare away some people and I don't really blame them. For those who are willing to watch a series about incest, you might find it interesting because it handles the subject seriously.
Hajime no Ippo - I'm not sure if this is underrated but I don't really see a lot of hype for it. Simply one of the most addicting series to watch and the best part is, you don't even need to be a fan of boxing to enjoy it.
PLANETES - Years into the future we meet a group of people who collect debris in space. The universe is now habited in other areas besides earth and a new worker for the "half section" learns the tribulations behind such a task. Part adventure and part romance, PLANETES offers a realistic view of astronauts at work.

Karas = I have never heard anyone mention this title.
Gilgamesh= It was realllly slow and boring in the beginning but it got interesting later.
Nightwalker=It wasn't great but bearable to watch.
Kino's Journey= It really made me think about culture and life.
Infinite Ryvious= Same as Gilgamesh

Gunslinger Girl - One of the unique things about this series is that it takes place in Italy. Girls given a second chance at life through cybernetic tinkerings on their bodies. The true tragedy lies in their opinion that all of this is fine.

Not to mention a great soundtrack. It's the usual story of the "boy saves world" idea but how the author goes about it is different. Gotta love varieties.
