Making Good Top Ramen

I'm talking about making them without that cheap flavor package. What are some good spices to use?

If I get bored with regular ramen and there's no Shin Ramyun in the house, this is what I do...

Boil the noodles as usual. While it's boiling, I add my own mix of spices, because I like to experiment. Some of my favorite to use in ramen are:

Fish sauce (not too much or it might taste too strong!), sesame oil, lime juice, salt, soy sauce, Vietnamese five spices blend, rice vinegar, star anise, honey (goes really well with fish sauce, I think), dried chiles, sesame seeds, and some ginger.

I DON'T MIX ALL OF THESE IN ONE DISH. That probably wouldn't taste so good. I just experiment using a few of those ingredients and season to taste...

Throwing in some veggies helps too, like carrots, celery, spinach, and then maybe some tofu if there's any in the fridge.

Let's say you have some leftover soup or broth of some kind. Chicken, beef, seafood etc. flavors.

Use that for the soup instead of the powder that comes in the package.
Then add veggies or meat to it and eat!

Try chicken broth diluted with a bit of water, add a little mirin & white pepper - serve with some freshly chopped green onions

You can even fry an egg and put it on top!
