As a Chef for past twenty or so years I have seen things disappear from the market. I assure you this trend will continue and only accelerate in pace. What would disturb you the most to see dwindle or become very hard to get?

stinky tofu that genuinely stinks
i cant really think of much single ingredients but i fear that the number of family owned restaurants and specialty stores are decreasing. Commercial restaurants have taken over the world.
