Do You Follow The Rules Of Expired Food/items?

Say you have bread in your kitchen.. you really want to make a sandwich but the expiration date reads 2 weeks ago. The bread had no mold and is not hard.. still looks fresh.. do you eat? or toss?
I'm one of those people that are very expiration date-conscious.. Haha.. anything that is expired I have to toss and will not let anyone eat it/use it! My mom on the other hand.. "There is no mold/it's ok!" thing.. Haha..

For food that can turn moldy, then no, I only eat it if it's a day or two past the expired date (bread, butter, cakes, milk, etc)
For other foods, then yes, I eat it up to half year past the expired date. (chips, crackers, granola bars, juice boxes, soy sauce, etc)

I fail in the kitchen, since my stomach usually wins over my common sense.
If it smells alright, and looks alright, I'll eat it. xD
Of course if there's like mold growing all over it, I'll throw it out.

I do not throw anything out until I:
a ) Do the sniff test. I have a fairly keen nose, so I trust it to tell me what's truly heinous and past due.
b ) When a) seems fine, I move on to a tiny taste. I keep a glass of water nearby, of course.
Yeah, this is gross to some, but I didn't survive college without a car and sharing a fridge with five girls for no reason.
