It is pretty easy. I use chicken broth as the base. I also add in tofu but you don't have to. First beat some eggs. Boil the chicken broth and let it boil. After it boils add in corn starch that has been mixed with water to thicken the soup. Then let it boil again. After it boils then turn off the stove and slowly pour in the eggs while using a fork to stir the soup while you pour in the eggs. Add salt and pepper to taste.

^thats a pretty good quite recipe.
restuarants add a bunch of MSG to the broth.
to get your eggs to be thin like the restaurants, make sure you are stirring the broth as you slowly pour in the eggs (dont dump the eggs in all at once). make sure that the broth is making a whirl so that it carries the eggs away as you pour. garnish with some chopped scallions.
