Cheesecake! Does anybody know how to make it??

I used to know how to make it, but I forgot. It wasn't hard though. Very squishy...

this is my fav cheesecake recipe however you should definitely read thru some of the reviews to get tips on how to make your cheesecake smooth and creamy. otherwise it would crack and brown

Ingredients:
FOR CRUST:
1 cup graham cracker crumbs
3 TBsp. sugar
3 tbsp butter, melted.
FOR CHEESECAKE:
1 lb. Philly Cream Cheese
1/2 cup sugar
1/2 tsp. vanilla
2 eggs, room temp.
Crust.
Strawberry jam for decoration
1. Mix crumbs, 3 tbsp sugar, and melted butter; press into bottom of 9-inch springform pan. Bake at 350 degrees for 10 minutes.
2. Mix cream cheese, sugar, and vanilla with electric mixer on medium speed until well blended.
3. Add eggs; mix until blended.
4. Pour into crust.
5. Place teaspoonfuls of stawberry jam into cheesecake, use toothpick and swirl to make pretty designs. :]
6. Bake at 350 degrees for 40 minutes until set.
7.Turn off oven.
8. LEAVE CHEESECAKE IN OVEN, let sit for one hour.
9. Take cheesecake out of oven, let set at room temp for one hour.
10. Place into fridge, and chill for 4 hours or overnight.
Credits: Back of Philly Cream Cheese box, 2 recipes with modifications.

the cream cheese should be softened COMPLETELY (kind of like a cool whip consistency), otherwise you'll get cream cheese chunks in your cake. if you need to, microwave it.

Cheesecake filling
2 pounds softened cream cheese (four 8 ounce bars)
1 cup of sugar
1 teaspoon vanilla extract
1 teaspoon lemon juice
4 eggs
One 9-inch spring form/round pan, bottom buttered, lined with a round of parchment
Set a rack in the middle level of the oven and preheat to 325 degrees.
Using a paddle attachment on your mixer (if it has one), beat the cream cheese smooth. Stop the mixer and scrape the mixing bowl and beater/paddle.
Add the sugar in a stream, mixing until just combined. Stop and scrape.
Add the vanilla extract and lemon juice. Mix only until absorbed. Stop and scrape.
Add the eggs, one at a time, mixing only until each is absorbed. Stop and scrape after each addition.
Pour the filling into the pan over the crust , and place the pan in a jelly-roll or roasting pan filled with water to a depth of 1/2 inch.
Bake the cheesecake for about 60 minutes, or until firm except for the very center. Remove from the pan.
Cool completely. Wrap the cheesecake in plastic or foil and chill overnight before unmolding.
Cheesecake Crust
3 tablespoons unsalted butter, softened
3 tablespoons of sugar
1 egg yolk
1 cup all-purpose flour
1/4 teaspoon baking powder
1/4 teaspoon salt
One 9-inch spring form/round pan, bottom buttered, lined with a round of parchment
In a bowl, cream together the butter and sugar until light and fluffy. Beat in the yolk until smooth.
In a separate bowl, combine the dry ingredients and gently fold them into the butter mixture with a rubber spatula. The mixture will be crumbly.
Press the dough down evenly and firmly to cover the pan bottom, which has been buttered and lined with a round of parchment paper.
Bake for about 15-20 minutes at a low temperature (325 degree preheated oven), until the dough is golden and baked through.

Traditional Baked Cheesecake
Serves 10-12

Base
250g plain sweet biscuits
125g butter, melted
Filling
500g cream cheese, at room temperature
165g caster sugar
2 tsp vanilla essence
½ lemon rind, finely grated, juiced
4 eggs separated
125ml cream
1. Preheat the oven to 180°C. Brush a 20cm springform pan with melted butter.
2. To make the base, place the biscuits in the bowl of a food processor and process until finely crushed. Add the butter and process until well combined. Transfer to the pan and use the back of a spoon to spread evenly over the base and 2/3 the way up the sides. Place in the fridge until required.
3. To make the filling, use electric beaters to beat the cream cheese, sugar and vanilla essence in a medium bowl until the mixture is creamy. Add the lemon rind, lemon juice, egg yolks and cream. Beat until well combined and the mixture is light and fluffy.
4. Use clean electric beaters or a balloon whisk to whisk the egg whites in a medium bowl until peaks form. Add to the cream cheese mixture and use a large metal spoon to fold until just combined.
5. Pour the mixture into the prepared pan. Bake in preheated oven for 40 minutes, or until just set in the centre. Remove from the oven to cool completely.
6. Cover loosely with plastic wrap and place in the fridge overnight to firm. Remove 30 minutes before serving. Cut into slices and dust with icing sugar to serve.

the best trick i found for this is to soak your cream cheese in warm tap water until it comes to room temperature. that way none of it ever burns/dries our nor does it heat unevenly

but since you're making it for a family reunion, i think it would be cool if you made mini cheesecakes
i like making these for groups cuz you dont have to worry about cutting and splitting an equal amount.
nor deal with utensils
you basically follow a simple cheesecake recipe,
but once youre done mixing it, you take nilla wafers and put them in cupcake holders,
then pour the cheesecake mix in to about 3/4 way. and bake!
i like to top mine with a slice of canned mandarin orange, 1/4 fresh strawberry, and a small slice of kiwi.
and i like to brush some of the mandarin orange glaze from the can over the top so it gives it a nice glow
but any fruit is good, even getting a canned cherry or blueberry topping is fine.
i just prefer the fresh fruit cuz i think its more pretty and tastes better :-)
