one time i ate at this korean restaurant and ordered a kimchi mackeral (sp?). I never realized there is so much msg in it because for some reason i was able to identify the flavor of it. Then my stomach hurt and i needed to intake a lot of water.

really no need for that much msg.
in fact you dont need msg to make a nice meal - just fresh meat good vegies , fresh seafood and so on will have good flavour.
i htink they use msg to hide old or poor ingredients.
to help overcome it i recommend ice cream. sugary stuff will stop the msg crush.

For some reason though with restaurant foods I get major headache with it and i am a girl who never ever gets headaches for any reason.

A. MSG is a flavor enhancer that has been used effectively to bring out the best taste in foods, emphasizing natural flavors. Many researchers also believe that MSG imparts a fifth taste, independent of the four basic tastes of sweet, sour, salty and bitter. This taste, a new taste recognized by foodies, is called "umami", pronounced oo-MA-mee [Japanese for “deliciousness”]
Glutamate is an amino acid, found in all protein-containing foods. Amino acids are the building blocks of proteins. This amino acid is one of the most abundant and important components of proteins. Glutamate occurs naturally in protein-containing foods such as cheese, milk, mushrooms, meat, fish, and many vegetables. Glutamate is also produced by the human body and is vital for metabolism and brain function.
Monosodium glutamate, or MSG, is the sodium salt of glutamate. When MSG is added to foods, it provides a similar flavoring function as the glutamate that occurs naturally in food.
Manufactured MSG is comprised of nothing more than water, sodium and glutamate. In the early 1900s, MSG was extracted from natural protein-rich foods such as seaweed. Today, MSG is made from starch, corn sugar or molasses from sugar cane or sugar beets. MSG is produced by a natural fermentation process that has been used for centuries to make such common foods as beer, vinegar and yogurt.
The reality is that the body cannot tell the difference between monosodium glutamate that occurs naturally or that which has been produced in a lab. I won’t argue with people who say that have a sensitivity to monosodium glutamate, but I do believe that people like to jump on bandwagons just to jump on them and that a placebo can have the same effect on you as real medicine. I’ll just ask that you think for yourselves and make intelligent choices based on facts and not on fear or popularity.
For the rest of you who are still with me, you can buy monosodium glutamate at the grocery store under the brand name Accent.
Oh, and those Million Dollar Crackers everyone loves so much? They are made with Hidden Valley Salad Dressing & Seasoning Mix. The number four ingredient? Monosodium glutamate.
By the way, on a restaurant menu or on packaged goods, the word monosodium glutamate must be spelled out in its entirety. You will never seen monosodium glutamate referred to as MSG in these instances.
