uhmm , a light dressing would be nice ..
like ..
lemon and olive oil , slat and pepper ..
or you can sub the lemon wwith squeezing in some mandarin juice [:

i learn from the cooking network that eating uncooked spinach is not beneficial at all, since you need to cook it in order to break down the enzymes and proteins...i was sad when hearing this...all those times i ate spinach salads =(

My favorite salad is actually spinach and strawberry...
Dressing contents:
2 tablespoons sesame seeds
1 tablespoon poppy seeds
1/2 cup white sugar
1/2 cup olive oil
1/4 cup distilled white vinegar or balsamic vinegar (I use balsamic)
1/4 teaspoon paprika
1/4 teaspoon Worcestershire sauce
1 tablespoon minced onion (I use red)
uhm... substitute less sugar if you're not for too sweet. I only use 1/4 cup. Also, feel free to add other fun bits such as feta/blue cheese, pecans, those fried noodle type dealies, other fruits such as blueberries, bananas, pears...etc.
