Fish Recipes Can anyone help me out? how to get the smell out?

Ok, so anyone get any recipe on seasoning and how to cook fish? Not fried where the fish is like hard crusty bread though - absolutely hate that.


i've tried lemons to get out the smell but it turns the fish really sour ......


Also it sometimes tastes too fishy (if that makes sense).

I have no fish recipes because I don't eat fish but I think I can help with the smell.

Lemon Grass!


I don't think it takes the smell out but it makes it smell better^^. All you do is add one lemon grass into whatever you're cooking and it makes the food smell good and not so fishy. Don't eat the lemon grass after your dish has been cooked. Toss it out.

Ginger usually takes the smell out too, that's why they have steamed fish with green onions and shreds of ginger =) sooo yummmy!!!

I love my mom's recipe for steamed whole red snapper with ginger & green onion sauce.. It's to die for. ahah Here's the recipe:

1 lb tai red snapper (either whole or filets) *If you cook a whole fish it will take a bit longer to cook.
1/2 teaspoon salt
1 garlic clove, minced
1/2 cup thinly sliced gingerroot
3 tablespoons peanut oil
3 stalks scallion or green onion, finely julienned
5 sprigs cilantro
2 tablespoons soy sauce
half a lemon sliced into slices

Scale and clean fish, leave head and tail on as long as it can fit into the steamer.
Place cleaned fish on a heat proof dish that fits into your steamer.
Rub fish inside and out with salt, garlic and a pinch of the ginger.
Score the fish/filet with a knife
Stuff the fish cavity with lemon
place in steamer and steam for 8-10 minutes.
In a small saucepan, heat peanut oil until it starts to sizzle.
Remove fish from steamer when done. Sprinkle scallions, remaining ginger and cilantro sprigs on top of fish.
Pour hot oil on top of fish and let it sizzle. Top with soy sauce.

Actually any firm fish can be used for this recipe such as; halibut fillets, trout, bass or other snappers can be used.

my mum usually use ginger or cut chilli
