Why don't we do this first
You can set your computer to view hidden files from
Start > control panel > Folder Options > Under the view tab, select show hidden files our folders
Once you do that, browse your ipod from My Computer and the music should show up.

Alternatively get something like this
http://www.getsharepod.com/

That way you can have a copy of all your music on your computer again.

Where the heck is my ipod...

In itunes go to Edit> Preferences then disable syncing

Then you can just drop albums into your ipod music folder in itunes
or
Make a playlist, drop in and organize your music, then drag and drop the playlist on the music folder under your ipod.

This program will allow you to transfer your song files from your Ipod to your computer. Make sure to use this program w/o iTunes running, though.
