I was wondering if they really care about which subjects you take. Like if you take a subject where more people score higher, would it seem less impressive than a harder subject? Language SAT IIs vs. Science/Math SAT IIs.
For my SAT IIs I was going to do Korean and Chinese. I know both of the languages pretty well since I learned it even before English. But would colleges not like that since the majority of the kids who take these tests are native speakers and earn mostly high 700's?
Also does college board allow you to take two listening language tests on the same date?

Depending on the colleges you are applying, they may prefer to see SAT subject tests from the following area: one math, one science, and one of your choice. But I think those apply to schools such as MIT or the like. I think your major may have something to do with it too i.e. engineering, biology, premed, etc.
There are some colleges that require certain SAT subjects so look into the college you're applying for any information on that but as a whole, I think colleges don't care much as to which SAT subjects you are going to take.

For your last question - I think so. Up to three SAT subjects on the same test date, if I'm mistaken.

i think the UCs and probably a lot of other colleges ask that you take the Literature and the Math II

I believe you're NOT allowed to take two listening tests on the same day. Not quite sure though.
Usually, Math IIC is the norm for all SAT II takers. Pretty much everyone uses it as one of their subject tests. Also, Math IC is useless. Don't take it. A lot of colleges don't accept it or just look down on it.
Science SATs are good, too. Some colleges require a science SATs, while some just recommend it. A lot seem to like the Chemistry SAT. But I worn you. I think that test is brutal. I mean BRUTAL. But then again, I absolutely hate chem and didn't care. haha
Anyways, same goes with the Literature SAT. I think the UCs recommend it. (Or was that the pre-writing section SAT days?)

i think some colleges take the math 2 sat as a placement test
so you should think about taking the math 2 one. it's sort of standard for most. and it covers everything up to precalculus if i'm not mistaken.
up till now i've only looked at colleges that require a math and science one.
a foreign language one might not hurt though. although 2 foreign tests seem kind of eh to me.
