Hmmm...I'm pretty sure some of these have been listed already but here are the chick flicks I really like.
-Sleepless In Seattle
-Under The Tuscan Sun
-Pretty Woman
-My Best Friend's Wedding
-You've Got Mail (probably one of my favorite movies ever)
-A Walk In The Clouds (sucker for Keanu Reeves; and I think it's better than The Lake House)
-An Affair To Remember
-Sex And The City: The Movie
-Beaches
-Casablanca
Bollywood movies are pretty awesome too. XD

I can't believe I forgot about My Best Friend's Wedding.
Some day, when I'm awfully low,
When the world is cold,
I will feel a glow just thinking of you...
And the way you look tonight.
Does High Fidelity count? I don't know if it's a chick flick per se, but it does have Cusack and he's in two other movies I mentioned lol.

They also made an american version of it, but if I were u, I'd skip it for now and watch the Korean version first.
Somebody mentioned The Lake House up above, which is also an americanized remake of the Korean movie Il Mare. Stars the same Korean actress as My Sassy Girl (Jeon Ji Hyun, she's so fine too). I'd watch the Korean one first if u haven't seen the Lake House yet.
And one of my favorite chick flicks, The Hot Chick because Anna Faris is so hawt
PS: I'm a guy

I second that. Definitely watch Il Mare first. I liked it much much better than the Lake House. I just felt that Il Mare seemed much more magical, and I liked it's slower pacing although some of my friends complained that it was sorta boring at part. I found it fit right with the overall mood of the story. I took it as more of a subtle magic touch to simple ordinary life vs a full on out fantasy or just plain contemporary romance movie.
Also try:
27 Dresses - for some great chemistry between the leads
Ensemble C'est Tout - for the same as ^, and just for a really feel good type of movie
Jane Austen Book Club - for Austen fans and for a greeeeeeat geeky male lead *cough* Grigg *cough*
Pride and Prejudice - because who doesn't love Lizzie and Mr. Darcy?
Becoming Jane - because I seem to be on a roll with all these Austen themed movies. lol.
10 Things I Hate About You - Heath Ledger

Hahahahaha movies based on Nick Hornby books kind of are like.....sorta chick flicks? They kind of fall in the middle. I never saw High Fidelity but I did love About a Boy.
Bridget Jones' Diary (surprised that no one's mentioned this one yet!)
XD I can't believe I forgot Bridget Jones!!! Definitely one of good chick flick.
Whilst we're on the Colin Firth/Hugh Grant train, I should also mention Love, Actually! Rodrigo Santoro an added bonus. <3
