Definitely find out what she would like, there are so many different varieties in chinese food too. Ask if she has a sweet tooth if so, what kinda desserts would she like and such.
If you are unable to attain such information the best is to pick out your best dishes that you can make and let her be the judge of them

The problem is that the only person that knows what she likes is my boyfriend and we're kinda not on talking terms right now.
I'm thinking maybe some sort of pasta dish or Vietnamese food. I don't know what my best dishes are

No thanks to Moroccan food. I'm going to try to cook some grilled shrimp and mussels in coconut milk and sees how that turns out. If it turns out good, that's what I might be cooking for her.

I've had clams in blackbean sauce. But never mussels.

mines came out all right!! but then again... u cant use white wine... hmm... have you considered apple cider vinegar and apple juice instead? it might a bit sweet, but mixing it with the broth and a bit of salt might even it out. ionno... i'd test it out for you if i had more mussels left... =T

but usually a safe bet for chinese food, is a lot of different types of dishes with rice, or if you don;t want rice make something with noodles, it would be delicious.
Stir fry veggies with sesame oil, and serve with rice, then make curry chicken or something.
Or if you don't want chinese food, and you were planning on making viet food, pho is always a safe bet
