Well I have some raw alaskan salmon from costco, (it's a big warehouse store)
Can I make sushi with this? I'm not exactly sure if its safe or not.
and it comes in big slabs
How would I cut this?
Any tips on how to make a simple salmon roll?

Life is too slow but it passes too quickly

Don't eat fish raw unless it says it is sashimi-grade fish. If you're trying to make sushi buy fresh fish from a specialty fish market (where they pick up fish everyday), not some place like Costco.

lawl, i would just eat. Fish is fish to me.
I just cute it in half, and cut against the grain (line) of the meat.

But, I prefer to catch my own first and eat it fresh. like STURGEN <33

People around me make sushi from costco salmon/tuna all the time.
It's actually safer to make sushi with fish that have been FROZEN, not raw, since freezing kills bacteria.

^We thaw our sashimi in the fridge for a couple of hours before taking it out to be sliced.

And to the OP, I don't know about making sushi from ordinary salmon, we usually buy stuff that was meant for sushi/sashimi.

do NOT make sushi from any fish unless it's cooked of specified for sashimi or sushi. besides from being fresh fish, the way they handle the fish is different too. and yes.. thaw it before you cut it, just leave it in the fridge (special location, do not put it in the same rack as meat/fish. put it on the top shelf and cover it so there will be no contamination) i work at a sushi/japanese restaurant head quarter and i've learned quite a bit from the seafood buyer/vp operations smile.gif

Dang, I used to just cut up salmon or tuna from Costco or Sam's Club as sashimi and eat it raw o_O

I didn't know it was that important to get sashimi-grade fish... nothing bad has happened to me from eating all of the raw fish from Costco or Sam's Club........

But uh, I cut it into 3 inch long slices.. about less than a centimeter in width.

WRONG

Freezing only stops the bacteria from growing. Once the fish has warmed up, they're back in action. That's why food that is frozen raw must be cooked.

If it was 100% safe to make sushi/sashimi from just any old frozen fish, then don't you think all the restaurants would just bulk order from Costco and the like? There's a reason they buy specialty fish, you know. You might eat Costco stuff raw all the time, but that doesn't mean sooner or later you might catch something. It's better to be safe then sorry.
