It can be VERY frustrating when some people view Chinese food as only chow mein, sweet sour pork, fried rice, etc -many of which are either heavily Americanised/Westernised or are themselves Chinese-Western inventions (I discovered sweet sour pork is in fact a real Chinese dish but what we get in the West is apparently extremely different from the real thing).

The aim of this thread is really to just demonstrate the variety that is Chinese cuisine. It's silly to stereotype Chinese cuisine considering how LARGE the country is. In other words, there are MANY regional cuisines.

# While some ppl know about this, I bet most are unaware of Chinese CHEESE! Yes, there's such thing.

Yunnan Cheese (Rubing)




Rubing (乳饼) is a firm, fresh goat milk cheese made in the Yunnan Province of China by people of the Bai and Sani (recognized as a branch of the Yi in China) minorities. It is either pan-fried or steamed before serving.

# Guilin Mefin (Guilin Rice Noodles) (桂林米粉)





One particularly well known rice vermicelli of slightly thicker variety, is called Guilin Mifen (桂林米粉). It can be served as a noodle soup or 'dry'.
"Gulin mifen is essentially rice noodles blanched in boiling broth, then with seasoning spices, cured meat, suckling pig slices, scallions, peanuts and hot peppers."



# Lamb with leeks in Steamed buns





Popiah (薄饼)




Popiah is a Hokkien/Teochew-style fresh (non-fried) spring roll.

It is essentially a thin paper-like crepe made from wheat flour and is typically filled with finely grated and steamed or stir-fried turnip, jicama and carrots along with fresh lettuce leaves, shredded omelette, Chinese sausage, thinly sliced fried tofu, crushed peanut or peanut powder and sweet bean sauce. However, there are many variations of popiah, with some including pork (lightly seasoned and stir-fried), shrimp or crab meat. Other condiments may include fried shallots, hoisin sauce and sweetened soy sauce.

Similar foods in other cuisines include the Filipino/Indonesian variant referred to as Lumpiang Sariwa. In Vietnam, b ba is the Vietnamese variant of popiah, introduced by Teochew immigrants.

# Dapanji (Big Plate Chicken) (大盘鸡)




This is a popular dish in Xinjiang and has rapidly spread to other parts of China.
The main ingredients usually include chicken, onions, garlic, green peppers, chili peppers, potatoes, ground cumin, ground Sichuan peppers, cooking oil, soy sauce, and beer.
It is served with thick flat noodles to soak up the rich sauce.


This one is served with unleavened fried bread instead of noodles.

# Dian dian mian (担担面)




Dan dan noodles noodles is a classic dish of Chinese Sichuan cuisine. It consists of a spicy sauce containing preserved vegetables, chili oil, Sichuan peppers, pork, and scallions served over noodles.

Also called soup dumplings, it is a bite-sized dumpling in a thin flour wrapper with a pork, sometimes crab, filling and a rich broth that burts from the wrapper once you take a bite.

Kaolaolao



This interesting beehive-looking dish, called a kaolaolao, is acutally a noodle dishfrom 山西 Shanxi Province. It's made from hulless oat.

i am seriously...SO hungry now. but yeah, for sure... people stereotype Chinese food way too much.. you know this when you go to an Asian restaurant in a predominantly caucasian college town and there are 2 menus: one for caucasians, and one for chinese people =o=
I really want the lamb in the bun at the moment. I like cantonese food a lot and that's one of the cuisines I'm trying to learn at the moment so I can enjoy that kind of food away from home.. but it's still so hard to cook with limited ethnic ingredients available at local grocers =(

I had that at my guys house. AHHHHHHH!! His mom made it cause its his favorite dish and it's turned into mine as well. SOOOO GOOD!!!!

I suppose in the West they try to cater to a Western taste. Fortunately, the restaurant scene in Australia and the US has been changing in the past few years.

These aren't really 'burgers', nope, they're actually steamed pastry buns with a filliig of braised pork belly, pickled vegetables, chilli and peanut powder.

I love westernized Chinese food!
Well actually I don't really like Chinese food =T.
But like sweet and sour pork and shrimp fried rice is soo good.
And I told my friend that I was eating Chinese food and shes Chinese.
N she asked me what I was eating.
So she said "Thats what white people order!"
LOL.
I hope that made sense. xD

I sometimes have my cravings for Westernised Chinese food too -nothing wrong with that lol. It just so happens that people often have misunderstandings of 'real' (debateable) Chinese food.
People also fail to realise that there are many types of Chinese food and they're likely to have been exposed to only one, normally Cantonese (often a poor version of it too).

There are plenty of differences between say, Cantonese food and Sichuan or Xinjiang. And Beijing...and Hunan...I could go on hah.

this is gonna be my favorite food thread. i love, love, love guilin mifen.
there's also this dish with beef, some other parts from cows, and white radishes that's really good. especially with hot sauce <3; great for winter.

Is the radish dish you're referring to also from Guilin?

# Lamian (拉面)

Lamian is the name of hand-made or hand-pulled Chinese noodle. It is also the name of the dishes that use these noodles.

Lagman




Lagman are specially handmade noodles from the Xinjiang region, made from flour, water and salt. The dough is divided into small balls and then stretched by hand. The noodles are boiled until very soft and then served topped with stir-fried meat vegetables (bell peppers, hot peppers, cabbage, onion, tomatoes) in meat stock.

# Paomo/Yang Rou Pao Mo (泡馍)




Paomo is a specialty of Shaanxi cuisine. It is a hot stew of chopped-up steamed bread and glass noodles cooked in lamb broth and served with lamb meat. It is often eaten with pickled garlic and chili sauce.

I haven't had most of those except for dan dan mian, xiao long bao, chinese donout wrapped in rice noodle. Most of them are really Chinese dishes, from mainland china.

Yep, but some of the dishes have spread throughout the rest of Asia as well.
For eg, popiah is very common in Singapore and Malaysia. In Vietnam, the flour wrapper is replaced with rice paper and there are some additional changes to the filling. In the Phillipines, it's known as lumpia and has evolved to cater to the Filipino taste.

# Zhua Fan (抓饭)



Shou Zhua fan or "rice eaten with hands" is a special Xinjiang dish rice cooked with fresh mutton, shredded carrots, onions, lots of cumin, and raisins, and so on. It is eaten with the hands, hence the name Shou Zhua Fan.

# Hakka Lei Cha Rice (擂茶饭)




The history of Hakka Lei Cha Rice can be dated back to the Qin Dynasty when war and turmoil were abundant.
Lei Cha Rice is said to be very healthy and is made up of pounded Lei Cha, rice, lots of vegetables, tofu, long beans, rice beans, black wood fungus, potato leaves, preserved radish and peanuts.
