lyzerg, what a great idea to open a thread for fellow soompiers to ask questions about food! laugh.gif I remember a couple of Soompiers had wanted to get together with me to a start a thread similar to this, along with cooking tips, but we never got around to it. Busy schedules. tears.gif Anyways, for the time being, I'm here so if anyone has a question, I'll try my best to answer or help as much as I can. laugh.gif

Oooh, wonderful!
I was just going to post a thread asking for a recipe, but now, I don't have to!

Does anyone happen to have a recipe to fried shrimp with peach salad sauce?
If you don't know what I'm saying, it's like...
when people fry shrimp and put peaches on it and pour a whole bunch
of yummy sauce on it. Does anyone know what I'm talking about? ._.
I want to make it for my boyfriend for Valentine's day =)

Thanks in advance xoxo!

Hey. I'm a pseudo health freak so I wonder a lot about nutrition.

1)You know the whole "Daily Recommended Intake" for vitamins, minerals, and other things? Does anyone ever actually get 100% of everything? Or is it enough to get close to it?

2)What exactly is bad about processed stuff other than high sodium/sugar that's usually associated with it? Is there some specific ingredients that I should stay away from? Are preservatives bad for you?
For example, what makes KD Mac and Cheese bad because its nutrition chart doesn't look too bad.

3)Since Teflon and other non-stick stuff is linked to cancer I usually stay away from it. I still have a non-stick rice cooker and I use it pretty often. Should I change rice cookers?

Cooking question:

4) How do I not burn the pan when I'm frying eggs? Especially when I'm adding stuff with the eggs, it seems like the vegetables I throw on soak up all the oil, leaving a dry pan for the eggs to burn on. Still though, even if its just eggs and I cook on low-mid heat, it's always a mess after (is this just unavoidable?)

5) Does anyone hand wash their dishes here? How do you clean your sponges? What do you do with uncleanable particles that are glued to your pans?

Thanks in advance and I'll probably be posting here a lot. =D

4) cook the eggs and veggies separately then add them together and mix.
5) soak the pan in hot water and dish detergent to help loosen any particles stuck on there. if that doesnt work, use SOS cleaners. they are round metal cleaning pads that provide very abrasive scrubbing powder to get rid of tough stuck-ons. i throw my sponges in the dish washer along with my dishes to get anything gross off.

Are you trying to make a frittata? Usually I would heat olive oil in a pan (cast iron) on medium low heat and then add my veggies. Cook veggies until their tender but still firm. Reduce the heat to low, add your eggs, and cover. Cook for approximately 5-8 minute. Or sometimes when I'm lazy, I'll throw it in the oven for 10 minutes on 350.

I use the dishwasher but found some info that might be helpful to you.

As for the particles that are glued to your pans, there are different type of methods. For me, it's my stainless steel pans that are a pain in the butt. Usually I soak the pan overnight with hot water along with soap and then scrub. smile.gif

Hmm, I'm pretty guilty of cooking chinese food that are deemed unhealthy. sweatingbullets.gif If you want to make healthier chinese cuisines, use reduce soysauce to replace salt and regular soysauce, instead of frying veggies in a wok, roast them in the over.

Here are some healthy chinese recipes that I found online. It doesn't look too complicated. Hope it helps. laugh.gif

FOr Chinese, anything that doesn't has heavy sauces, deep fried, or has a lot meat.

Stick with the steamed or the stirfried stuff.

1)You know the whole "Daily Recommended Intake" for vitamins, minerals, and other things? Does anyone ever actually get 100% of everything? Or is it enough to get close to it?

I wouldn't say its enough, because my teacher told me because the soil we grow our food on is so deficient in nutrients due to excessive use of pesticides and chemicals, our food isnt as nutritious as say, food in the 1950s. this means a cucumber in the 1950s has more nutrients than the cucumber in 2009. so in order to exceed RDI you'll need to like eat tons and tons of food. you've got to be really something to actually measure and watch your RDI, in modern days like this unless you're a nutritionist it's really almost impossible. just watch what you eat and you'll be fine. take quality supplements, and not those cheap ones with plenty of fillers. vitamin c is a complex vitamin, not just ascorbic acid. vit e isnt just tocopheryl acetate but also a whole vitamin complex with other compounds. so look out when you choose supplements smile.gif

preservatives and food colourings and chemicals and all the numbers you don't recognise in the ingredients list are usually chemical compounds. although they may be certified food safe these stuff are not easily digested by the body, and since they are unnatural substances, they may not even be passed out and stays in the body. an accummulation of these compounds have been thought to link to cancer and various other illnesses, although in the very new field of nutrition, this is yet to be proven. you can choose to believe it or not~

if you';re interested in stuff like this I'd suggest you read Mary Frost's "going back to the basics of human health" its a pretty provocative book with lots of...heretic information that even present doctors would disagree with, so please read and believe at your own risk

to each his own. up to you! I've got this book about teflon and such too,

Cooking question:

5) Does anyone hand wash their dishes here? How do you clean your sponges? What do you do with uncleanable particles that are glued to your pans?

lol I do! After I've finished washing the dishes I'd wash the sponge in hot soapy water, and throw the excess contents of soap used for washing the dishes previously. if you cant scrub gunk out of your pan, best leave it in hot soapy water for a night to loosen the particles. otherwise the surface gets scratched easily and it won't last long.

if your pans have been into some oily action like frying and deep frying, please do not reuse te oil, it';s bad for health. put the oil away in a small bowl, let it cool and pour away INTO THE BIN. pour it in the sink and rack up plumbers' fees at your own expense XD. before washing the pans wipe it down with kitchen paper/newspaper. it soaks up the excess oil and makes washing soooooooo much easier. I know, extra step here, hey at least you save soap too!

Thanks in advance and I'll probably be posting here a lot. =D

you mean something like this? laugh.gif

Ingredients:
The bread
180 g bread flour
20 g cake flour
5 g instant active dry yeast
3 g salt
5 g skim milk powder ( susu tepung biasa pon boleh )
10 g condensed milk ( susu pekat )
50 g white sugar
10 g butter
10 g shortening
70 -75ml warm water
2 egg yolks ( about 30 g )

The topping:
30 g butter
60 g confectioner sugar
30 g egg ( beaten and measured )
100 g flour
vanilla essence
grated lemon skin

How to make:
Preparing the bread:
1. Mix the yeast with the warm water and add in the egg yolks. Let rest for 5 minutes.
2. In a mixer bowl, add in flour, sugar, salt and milk powder. Add in the yeast mixture and mix for approx. 2 minutes. Add in the condensed milk after that and knead for another 2 minutes.
3. Mix in the butter and shortening and mix for 3-4 minutes. Scrape out the dough from the bowl and knead it on a floured workspace using your hands until dough becomes elastic ( approx. 5-8 minutes ) Leave in a clean bowl, covered for 1st proofing of 30 mins.
4. Punch down air and let rise for the second time for 75 minutes ( or more.. if you want fluffier bread, let it rise for at least 90 minutes. I like mine a little dense )

Preparing the topping:
5. Meanwhile, for the topping, mix flour and confectioner sugar in a bowl. Pour over your workspace and make a small well in the middle.
6. Mix butter, egg, vanilla essence & grated lemon skin together and pour in the middle of the well. Mix using a scraper or using a fork until well corporated. Make a round ball of dough, pat it flat, wrap in cling wrap and leave in fridge/freezer until being used.
Making the bread:
7. Divide the bread into 8 equal size of about 25g each. Take out cookie dough for the topping and divide those into 8 equal portions as well. Roll out the cookie dough and place it on top of the bread dough. Neatly wrap the cookie dough and dip it in granule sugar ( gula pasir ) Using a knife/scraper make a lattice design on the cookie dough and place the bread on a baking sheet.
8. Leave to proof for 10-20 minutes in a cool dry place to avoid the topping from melting. it should look something like this

Bake in a preheated oven of 180 deg. for about 15-20 minutes.

Note: original recipe was 5 times the amount. this amount makes enough for 2 persons smile.gif

Does any body know any good asian dessert recipes or any pastry recipes? I want to try some out...

I also always wondered what went into hot dogs....Someone told me it is full of raccoon meat, that sounds kind of mythical, but you never know. Maybe it's like pepperoni, a mixture of meat, which the people had left overs with because it couldn't go anywhere. I don't know.

Does anyone?

I think I know what you're talking about.
Is it yellowish/white?
Because if it is, it has 2 main ingredients, mayo and condensed milk .
If that's not what you're talking about then, I'm sorry I can't help .
