I'm going to a private art school and taking classes online right now using financial aid. We are told by the school that we can't take classes from other institutions while there. Since I'm taking classes online, if I went to a local community college now and paid money out of pocket without financial aid (that's one easy way to get caught) will they find out? I don't see anything wrong with doing this as online classes allow me to have more flexibility so I can multitask this.

I don't see anything wrong with you taking community college classes out of pocket. Unless they have a specific reason or rule as to why they don't want you to take classes elsewhere then I don't see the problem. You did the right thing not getting financial aid for your community college, because I know for certain federal/state grants, you can't accept aid at more than one school at a time.
Maybe they don't want you to try transferring credits?

Yes, it's not a maybe, they DON'T want us to transfer credits. They want us to take their liberal arts classes which are 1.8k a pop for each class and would be about 300.00 in a community college.
I'm not looking to transfer them maybe. I just want to get my degrees quicker.

I know someone in university also taking college classes - just need to do good scheduling before registering - allow travel time etc
Just don't tell your art school about your second agenda

Be very very careful with this one; it would be better to clear it with an advisor / counselor. I knew someone who tried that, got caught, and they lost their financial aid and they were booted from the school (community college didn't care).
Just be careful... I don't think it's wrong, but it'd be better to check with your art school.
