I have been trying to make onigiri with Spam in the middle, but it just falls apart. I'm using a triangle mold but with plain white rice. I've made onigiri before with plain white rice and it stayed in shape. What am I doing wrong?

I'm not quite sure what you're doing wrong, but if you just mold it the usual way with your hands it should stay together.

Are you using jasmine rice or sticky rice?

try cutting the spam into smaller pieces.
also, the rice can't be too dry, it needs to be the medium grain rice (aka sticky rice).

you can also dip your hands in water, then sprinkle some salt on your palms to help shape it.
when i was at an elementary school, the teacher busted out some salt and saran wrap and had the kids make their own onigiri with the leftover rice!
i write an important thing, and do not let's finish. a way of writing for freedom.

either your rice is too dry or the spam pieces are too big?

but usually when i make spam musubi, i use a piece of seaweed to hold it together like>>

these (: so maybe you can try that! it might be easier :]

I miss umeboshi onigiri.

Nothing beats Japanese convenience store food when you're on the go.
