How Do I Become A Patisserie Or Pastry Chef? Pics of cute, yummy cakes would be good too~

I know what you guys are gonna say, "WTH?! Is she crazy?!" or something I don't want to know sweatingbullets.gif
But I want to know how to ba a patisserie or pastry chef.
I searched Google and all of these useless things came out and I wanna know from you guys.
I'm still in high school, but my mom keeps asking me like, "What university do you want to go?" or "You
need to start thinking about your future" and blah, blah, blah dry.gif

So, can I PLEASE get help from you guys, cuz I think I really need to start thinking about my life ^^
Tips, advices, lots of info would be great smile.gif

Find a culinary school. I don't think you go to universities to learn this. My dad is a pastry chef as well, and he learned through experience and going to pastry schools all over Asia and conferences (actually i don't really know what the term is)

I have a friend who is becoming a pastry chef and she is training in Japan right now at a culinary school doing a pastries course for i think a year.

why would we think that?

i want to become a chef as well.
but according my parents, they want me to finish college, then attend culinary school.

Kekeke, me too~

Talk to your school counselor about any colleges or universities that has the Red Seal Apperentership course for baking.
You don't have to go culinary schools to become a certified baker or chef. (could cost less too!)

*The Red Seal is for Canada. I think it's the same for US? Not sure.

do u live in the US? cause in aust. we have liek tafe courses and stuff so liek ...students can do it
but they really expensive >.<
liek over $500
i rly wanted to do it ...

why would that be a crazy thing to say? its good that u have a direction in ur life, trust me, a lot of ppl dont and they just want to bum around

do some research on culinary art schools and maybe try to intern or work in a shop/restaurant/hotel to gain experience. i would assume it'd be similar to searching/applying to colleges and other professional schools. experience and practice!

Uh, go get some training. If you're from America, you can enroll in CIA or something.

Get some experience NOW. Being a pastry chef is hard work and you should see if you can actually handle it, also it gets you some practical experience...

Read some food books (not recipe books) and learn about the chemistry behind baking because you should basic knowledge first, Alton Brown's show, Good Eats is also great! A lot of people read On Food and Cooking but I think it's a bit...dry (boring). I recommend Alton Brown's book I'm Just Here for More Food: food x mixing + heat = baking.

Oh and no offense, I think you should stay away from restaurants, I think you're more suited to bakeries and cafes...

And stock up on equipment...what do you have so far? I think a stand mixer is a great investment, and I do meant GREAT investment!

I agree, $500 is cheap. People spend that much on a text book. Seriously.

Well anyway, I'm taking co-op for baking/pastry. Thank God, it's not for me. It's fun, but I prefer it as a hobby than a career. tongue.gif

I don't have any info yet, since i recently just chose this Major..i'm going to see my counselor next week..maybe i will have some info for you

They're usually diplomas, and run for 1-2 years.
It depend which area you're in. Just check out a culinary school/college that offers programs like pastry and bakery arts.
Get a job somewhere that requires baking/pastry skills.

If you still have a little highschool to go, and if you haven't already, take some >_> cooking/home ec courses. Lol.
Then see if you really would like to become a pastry chef.

To enroll in culinary school, do you need certain grades? or certain test scores?
I might be interested in culinary arts too if I don't pursue music ^^;

Culinary Institute of America, one of the best places that you can go to. My friend goes to the one in New York and loves it (I love it too because I get to eat some gooood food when I visit)

if you have a library near you, check the baking/cooking section, because i've read some baking TEXTBOOKS. they had questions to answer and everything @___@ and everything is measured by weight! *horrible baker flail*

you just need decent grades to apply to CIA, its seriously not that hard to get in. They do require 6 months of experience in a restaurant/hospitality job though.

Go apply at a bakery or a big high volume restaurant that has a seperate pastry kitchen. Keep in mind you will be working long, hard hours and scrap money. If any money at all being a complete noob. It's not all fun and games like TV make it out to be. You need to have the right attitude and mindset if you want to work in a serious serious culinary position, and not everyone is cut out for it sorry to say. That's why most [good] culinary school requires experience before applying, to make sure you dont drop 20->100k on school and then dropping out because you got tired or some mini cooper.

So if you really want to do it in the end, I suggest you grab some cookbooks, please stay away from those foodnetwork books. Start learning basic recipes, terminologies, and cook. Then go ask around restaurants and bakeries if they could use an extra hand prepping or running the place. OFFER to work for free first cause 90% of the time they wont turn that down ;D

Apply at CIA , Johnson & Wales , The Restaurant School ( I hate this school since I went there for culinary , bunch of bs stuff ) , Art Institute , or Le Cordon Bleu.

culinary / pastry schools are expensive so just be careful since you do have to pay crap loads of money if you withdraw
