soooooo i definitely need a video playing mp3, and the itouch was probably my top choice.
i want to know if getting a 16gb or a 32 gb is worth it for someone who watches helllla vids.
also, any major differences between the first, second, and however generations there are?
please help me fellow itouch owners!

I have the first gen, I think the second gen is sorta nice because it has physical volume buttons. Otherwise its nothing too different.
If you are that into videos, you probably want to just get an estimate of how much you can store on there. Remember it probably has to be converted to MP4 or a ipod compatible format before you can view it.
Actually, if internet isn't super important to you (and thats the primary reason I have and use it, love being able to go online with it) I think there is a zen or other brands that might fit your needs in terms of being able to play other formats AVI, wmv etc without conversion.

I have a 1G 32G second hand. The only main differences between the 1G and 2G is its form factor, and speed bumps+speakers+volume buttons on the 2G. If I were you, I'd either get a 1G used then upgrade to the new one that's going to be coming out by the end of the summer or the beginning of fall, or just wait it out for the 3G.
Getting a high capacity is also quite nice as you know that there'll always be room.
If you're looking for no internet, the Cowon S9 or the P3 came out recently and those are two nice options

If you have no need for wi-fi and you are planning on watching a lot of videos, go for the Cowon S9. The AMOLED screen on the S9 puts the Touch to shame. And the S9 is cheaper than the Touch, 16gb is going for $239.99 +tax and the 32gb should be coming out soon enough.

ipod touch is too nice !!
you can do everything exept making it like a phone !!
but if you dont like surfing the net and just want to listen to the music or watch video maybe you can try ipod classic or nano !!
