Do you just add some chilli into it while you're cooking?

use tobasco. it's like MAGIC how it becomes spicier without compromising the taste with the flavour of tobasco

It really depends on the dish I am cooking.
In general, I would used dry crushed pepper flakes. Brings a great spicy to kick to a lot of meat and pasta dishes plus more.
But if it was like to eat something is grilled, then you can't go wrong with Tabasco sauce
Or with raw oysters, Lousiana hot sauce!

Crab boil or Tony Chachere's.
You guys might not know Tony Chachere's unless you're from Louisiana or somewhere in the south.

I always add in a spoonful of gochujang / hot pepper paste. It always adds a nice kick.
