I'm taking the boyfriend out hiking sometime this week and I want to bring some food for us so we can have a picnic before hiking.
I'd love to hear some ideas/recipes. I am a pretty good cook and I'm opening to anything as long as it's more on the healthy side.

What Are Some Good Picnic Foods?

Mini toothpick sandwiches are super cute - just cut out bread in small shapes (can be square, triange, circle - your choice) then also cut the veggies/meat/salad/cucumbers/etc in the same shape. Stab it with a toothpick and just pack several in one. Alternatively, you can make a regular sandwich, stab it, and then cut it completely. The end result, something like this:

Fresh salad fruit - no topping needed, if you must have some, get some water, honey and a tiny bit of mint (previously crushed to a paste in a mortar) and sprinkle it. Don't forget to sprinkle lemon/lime juice on the fruit slices, so they don't oxidise on the way there.
Veggies and dip - ideally a bunch of different veggies (celery, cucumber sticks, pepper slices, cherry tomatoes on a stick etc.), and several dips (hummus, salsa, yoghurt based dip etc.).
Potato salad - My fav type is boiled potatoes, a bit of olive oil, a bit of vinegar, seeded olives, and chopped spring onion. It tastes even better the second day.

Sushi, hand food, sandwiches as other people mentioned.

Chocolate-dipped strawberries are a favorite of mine! After you dip the strawberries in chocolate, put them in the fridge to cool/let the chocolate harden and then pack them and go! They are really refreshing on a hot, sunny day.
