I don't understand if a guy admits to liking you. Whether it's by email, in person, or phone.. why do girls and some women give short worded answers. Like, idk, or a one sentence answer?

This goes for guys that do it to girls too.

Because you don't know what to say. Especially if you don't feel the same way, yet you care about that person enough not to want to hurt their feelings. Sometimes it's also a shock. Sometimes when people that I don't like confess to me I feel like I'm an animal trapped in a corner.

It can be taken either way. Out loud, or to himself. I was taking that like that like you literally said that to a guy. That's still messed up to be thinking when a guy confesses to you though.

short responses are like everyone else said: because of nervousness, a loss for words, or doesn't want to hurt your feelings.

and after confessing, there's usually an awkward moment. That moment could be surprise, as in "wow, i didn't know you liked me TOO" or "darn, I dont like you that way, but I want us to still be friends." (they do not have to be SAYING this OUTLOUD, but they might, who knows )
That's why you should say "you dont have to answer me now. take a while to think it out" or something like that. you can't just be expecting a whole speech of acceptance or rejection right then and there.

I've given one word answers before, and that's because I'm very shy when a guy expresses their feelings to me. I get lost in words, and would say "i don't know". It's either that, or i didn't want to hurt him by saying no, or any further words. Were humans, we don't know what we want most of the times.

This is so true. Just don't confess if you don't like the short responses that come after it. Really what do you expect people to say? I like you too? I hate you, get away from me? That's rarely going to happen right away because of the shock. You're way better off asking the person for a date or something. At least there's something to reject.

Short responses are always more likely to occur if the girl doesnt really like you back
If she seems stand offish and says it quite like "oh..." then she probably doesnt like you

Try and see their body language and stuff or the way they say their response and stuff
