Is chicken significant in mexican culture?

I'm doing this writing, and I can't think of anything. I'm reading this book that is base on mexican tradition (a really good book) especially food. They've had Chicken represented a few times, no I mean a lot and I was wondering if any body knew if chicken was significant in mexican culture? If it has to do with food, why?

The book is called, "Water for chocolate"

Have you ever seen normal Taiwanese or Korean people walking around on streets?
