They think you're cute enough to pat on the head. Does not have anything to do with your intelligence/maturity. Maybe you're just perceived as cute....and pat-able 
You shouldn't take it badly, but if you find it annoying, I guess you should kindly ask them to stop because they'll feel awkward if you lash out at them (they definetely don't mean any harm / belittling)

I think it's really disrespectful (hates it when people touches her head).

I don't know about this ladies, but i used to get petted as well, and I'm a man.. Haha
It shown sign of respect and love, (We don't say "I love you" unless you wanna get beat up. ) i guess because i used to always do it to my friends, but now i don't have anyone to pet.
I found it funny and "Cute" when they tried it on me, usually ends up with me giving them a punch to the chest

It can be ok if it's in good humor but if you feel unsure it's best you don't let them. Your bf might feel a bit insecure for you for good reason.
In Hmong culture that's disrespectful even if an old man does it to a little girl. I got that from Gran Torino which btw is a movie I recommend because it addresses Asian American culture clash.

I second this! Well I probably wouldn't want to go anywhere their groin area so I would punch them.
I hate it too, I'm not a damn dog or whatever. And it's not cute.
I get really pissed off when people touch/mess up my hair. Seriously. Do NOT touch the hair. And guys have the germiest hands too.
