what do you guys prefer? i grew up eating sour kimchi because my mom and my oldest brother prefers it that way. and my oldest brother always refused to eat kimchi if it was sweet. so we always leave a new jar of kimchi on the counter for a day and then put it in the fridge and that makes it get sour.

do you guys have a preference? or do you not even notice the difference? haha

I like sweet kimchi the best. I love eating it right after it's made. I don't like sour kimchi too much. Usually when the kimchi turns sour I use it to make kimchi jigae.

I like it in between, sweet for side dish and sour for soup.

^ Fermentation and rotting are such similar things in my head that I almost feel like that's the point mellow.gif

I like both in different situations -- sweet is better with certain things but certain other things you can't eat without sour -- but I guess in general I prefer something around the middle.
