I'm not a vegetarian, but i know for sure there are great ways to make sandwiches
get a bagette, and brush the inside with butter and toast each side
while in mean time, get some tomatoes, eggplant mushrooms and onions
satue (however you spell it
Bread is done, get some pesto and smear it over the bread, place the vegetables on each other and a fresh slice of mozeralla, voila

Sometimes i think we dont have to be a vegetarian to stay healthy. I love veggies too. So usually i would keep my meal to big portion of fresh veggies + fruits, fish and a bit of meat. And i feel good after that. greens. i love them.

it was odd, haha.
i was in the car on the highway...
and i saw a truck of chickens pass by.
the whole truck was crowded,
and the chickens looked so pathetic and sad.
like to the point where it hurt me to see these poor animals, haha
then, i thought about where these chickens were going
and the process each one is about to go through....
then, i felt reallyyy sad, hahaha
so, i quit.
right then and there.
it was extremely hard,
seeing as how koreans love eating meat every day.
i think i drove my aunt crazy, haha
what kept me going is that
i researched into how animals are killed
and idk...
i didn't know as much before i researched
so, it made me really determined not to eat meat anymore.
i used to eat a lot of tofu.
fried tofu, tofu with soy sauce, tofu in soup...
but i got sick of it, haha
come to think of it,
i don't think i eat a variety of foods, haha
but if you go out...
veggie delites from subway
veggie bowl from chipotle (basically, everything w/o meat)
green beans & sliced potatoes from boston market
vegetarian sandwich from potbelly's
grilled cheese from sonic
all excellent.
i supposed you can just make those at home, too?

We never liked that much meat anyway so it wasn't all that hard. The important thing is to eat lots of vegetable, beans, and proteins. Just because you can't eat meat, don't get french fries from fast food places or pasta at fancier places. Being a vegetarian doesn't mean healthy unless you eat healthy.
Personally, we eat some fishes because they're healthy (like Salmon, Tilapia etc but not shellfish because they're bottom feeders and it's not healthy).
Eat brown rice like a 1 cup cooked if you can or white rice because Asians can't stay away from rice LOL
Here are some of my favorite recipes:
Black beans and rice-canned beans, herbs and spices you like and that goes together (oregano+thyme, or cumin and cayenne pepper) lots of onion and garlic.
Chickpeas salad
Wraps: favorite cheese, tomato, avocado, cucumber, alfalfa sprouts, olives
saute asparagus with garlic and onion
saute broccoli and/or cauliflower (don't over cook)
butter beans and lima beans saute with garlic then add water.
saute frozen peas with garlic (I just think boiled is disgusting yuck)
steam or saute peas (the long ones)
salad with balsamic vinegar dressing
saute corn or boiled/steamed corn ears
for soup: I really love potato and spinach- boil the potato and once it's cooked, randomly smash some to flavor the soup, add frozen spinach, add salt and pepper.
Here's a great vegan website. Some are really bland because it's vegan but nonetheless, it has great recipes.

Good luck!

Hah hah. You can eat vegetables too you know.
There are plenty of meat substitute brands, like Boca and, my personal favourite brand, Morning Star.
As far as getting protein is concerned, one egg contains all the daily amount of protein one needs, so I try to eat one of those a day.
I personally eat a lot of stir fried vegetables (I don't mean chinese stir fried, I mean just stir fried in a pan, maybe some spices or a bit of butter in there).

It wasn't very hard for me, I have a ton of willpower. Plus, I never craved meat, ever.
Well, maybe once ... at In N Out.
I eat pretty much anything I can get my hands on, but not before scrutinizing the ingredients. I eat mostly junk, but besides that, I eat a loooot of eggs. Lots and lots. Scrambled on toast with ketchup, boiled, fried, poached ... in a tortilla, in a salad, with rice and veggies ... yeah, that's pretty much it.

LOL. I would imagine it sucks. I loooveee meat.
God. I tried being a vegetarian for fun, it lasted 3 months. You can take supplements, LOTS OF BEANS, and dairy. If anything, I'd could only be a pescetarian. I love seafood more than I love meat. I've been to a vegan restaurant before and it was prettyyyy gooood.

I started when I was like 12... and I didn't really like meat in the first place [heh] so it was very easy for me to switch to being vegetarian. My family all eat a vegetarian diet, and that really helps.
The key thing is to enjoy vegetables + other non meat foods. The only way to stick to the diet is if you actually TRULY like it. I don't really view it as "I cannot eat meat", it's just that I don't eat it.
As for diet... I think I have a pretty good diet. xD;
I eat nearly all vegetables, I have tofu like 4 times a week, and I eat soy meat. That is, soy that looks like meat but tastes nothing like it, LOL. Err. I also eat eggs, and dairy stuff...
My mom makes this weird congee mix thing every morning out of nuts, beans, rice, sesame, milk and grains or something... it tastes pretty good, actually. It's somewhat filling, but then again, I have a pretty small appetite.
I snack on fruits and nuts. My parents don't like buying junk food for me, lol. :X
It's pretty easy to get a hold of vegetarian food where I live - there's even a shop that's dedicated to vegetarian foodstuffs.

Eat a lot of fruits and vegetables, there are a lot of delicious fruits in season right now in the summer! Watermelons, blackberries, strawberries, peaches, yum!
You can also make kimchi dumplings, salads with vinaigrette dressing, veggie burgers, etc.

but anywhoo..I'm going to start out as a Vegetarian at least. The biggest problem? I only live with my mom and she cooks so much for 2 people and she eats meat. She already scolds me for not eating enough meat now she is just going to scold me even more for not eating any meat.
How do you balance out your diet when your family is one of your biggest obstacles?
And I find that it becomes pretty expensive to go totally Veg especially if you are going Veg and organic. Care to share some money saving tips??

Since you said you want to resist temptation half the battle is mental. You have to really commit yourself and have the right reasons for not wanting to eat meat.
also make sure to read labels. some things contain meat products that's not visible like chicken stock in soup.

What country are you in? In the UK, there's a brand called Quorn which do great substitutes to meat. They look/taste/smell like real meat too but are infact made from a mushroom protein. Honestly! Some meateaters couldn't tell the difference between the two. Whilst I don't advise eating only quorn for a vegetarian diet; it definetly is great for just starting out. Helps alot of people with their meat cravings.
Anyway before proceeding with this vegetarian diet, I definetly suggest you tick all the boxes of your dietary requirments. Alot of people make the mistake of becoming vegetarian and living off potatoes and rice =( A common problem is iron deficiancy. So, to prevent this; make salads with spinach and tomatoes, peppers etc. Spinach has alot of iron, however the iron is very difficult to absorb alone. It's much better absorbed with vitamin C, which is why eating tomatoes along with the spinach is important! =D You can research this further online though.
A favourite recipe of mine is kidneybean and mushroom burgers =D Mash up the kidney beans and chop up the mushrooms, with onions, peppers - mix together, form into pattie shapes and then fry in a pan.
