Another favourite of mine would be Indonesia guitarist Tohpati, his solo "Sendiri", which translates to "Alone", is a must-hear.
Other than that, I listen to all sorts of acoustic...

Blumchen - Gib Mir Noch Zeit [Lagerfeuer Remix 2000] (one of the best acoustic songs I've got and I use it on my acoustic test CD to judge speaker sound quality)

This is the only acoustic song of theirs I can think of, but a lot of their stuff is very soothing and serene. I love them.
Death to Birth by Michael Pitt I also love. Or was it by his band, Pagoda? I can't remember, but I'm pretty sure it was just the Michael Pitt solo version that was acoustic.
And damnit, I had another good one but it just completely left me.

I looooove acoustic music, I'll listen to pretty much anything. My favorite album right now is Adele's 19. It's not all acoustic but a lot of the songs are, and the album as a whole has kind of a laidback feel to it. <3
