Depends on what kind of genre you like. I really have no preference so I watch them all.
Please ignore crapturo and "oh filler bleach" those are targeted to mass who just want passing entertainement-(and yes I did watch crapturo and bleach, have all the seasons that are out so far in my 1st hdd and looking at the manga, those two series will never end)

Well those are the anime that will always sit in my 2nd hdd ( almost 300gig T.T). DO NOT EVER WATCH ANYTHING DUBBED- they will horrendously butcher your experience. Some of items mentioned above are licensed so have to dig though fansubs to find them.
The animes I listed are pretty far from being kiddy (gets you thinking about the meaning of life and/or just outright bloddy action/nudity). Some of the comedies are just hilarious.
Most of these anime can be found at boxtorrenst.com ( best website since they carry only completed series becuase like you; i hate downloading one episode at a time or waiting for the next episode)-and no, I don't know to make nzb files so I seed torrents. I am currently seeding Black cat and full metal panic second raid.
Also the anime I listed are fairly new (couple exceptions) so fansubs usually have high .mkv, hd, and xvid quality-
The new Black Cat and eureka 7 are holding me down now. If you want to jump in right ahead, go get hellsing first then samurai champloo then top it off with azumangah daioh then ghost in the shell both series (this covers and represents most anime genre that are rated quite high with reviewrs and viewers alike).
