3 Large Eggs, Room Temperature
1 Teaspoon Vanilla Extract
1 Teaspoon Grated Lemon Peel
1 1/2 Cups Cake Flour (all purpose works too)
3/4 Teaspoon Baking Powder
1/4 Teaspoon Salt
1 1/4 Cups Sugar
3/4 Cup (1 1/2 sticks butter) unsalted (salted is good too), room temperature
1/3 cup buttermilk (i used skim milk)
Preheat oven to 325F.
Line 12-cup muffin tin with paper liners. Whisk eggs, vanilla, and lemon peel in medium bowl to blend. Mix cake flour, baking powder and salt in another medium bowl. Using electric mixer, beat sugar and butter in large bowl until well blended, stopping occasionally to scrape down sides of bowl. Gradually beat in egg mixture (once this is combined i beat it on high until it's sort of fluffy but not too fluffy, you don't have to do this step). Beat in dry ingedients alternately with buttermlk in 2 additions each.
Divide batter among cups (you can fill it to the top of the muffin liner with this one instead of half way). Bake until tester inserted into centers comes out clean, about 25 minutes. Cool cupcakes in pan on rack 5 minutes. Remove cupcakes from pan and cool completely.
Can be made a day ahead. Store in single layer airtight container at room temperature.

today I made molten chocolate surprise:

^my failed attempt at making them T_T I think I put in too many eggs & flour and put them in the oven for too long; The "molten" chocolate inside turned sort of spongey cake-like...
oh well, I tried XD

Since I still can't master the frosting part, I used thinly sliced strawberries to cover the sides of the cakes, puahahaah.

tamago.. finally, the layers stuck closely to each other and didn't fall apart.
BUT i added too little sugar.


SUSHI~ basically just moulded the rice, wrapped the seaweed around it and topped it with the fish roe/seasoned scallop i bought from the japanese supermart.
didnt even get to use the tamago cos i ran out of rice.
