Crepes:
65g cake flour
...
I made mini blueberry cheesecake souffles yesterday ^^. They rose really high while they were baking, but they sank back down while they were cooling. =(
...
When you say 'cake flour', do you mean plain flour? I haven't heard of cake flour before...
Also, could you please post the recipe for your cheesecake souffle please? Those look so delicious!

No dear. There really is cake flour. If your cake a more soft spongey, fluffy feeling then if you would use all purpose flour. But when making crepes, if you don't have cake flour, I suggest using all purpose flour 'cause thats what I use. But looking at Minwoogrl's crepes, because she used cake flour, her crepes look fluffyer than those flat ones...haha

I made a batch of 32 for Valentine's Day. half chocolate&half plain. I wanted to make them prettier, but I didnt have much time :[ It still tasted really nice, if I may say so myself lol
And apparently, you're supposed to take the white paper lining out & you don't need a cupcake baking pan if you use the aluminum tins since they can hold their own shape up. You'll just have to place it on like a cookie sheet. I didnt realize any of that until AFTER i finished baking all 32 XD

Actually, I couldn't find almond flour. Do asian markets have them? I didn't have time to check cause I got into a car accident the day I made these. So, I just used plain bread sticks. I mean, pocky without the chocolate is just bread stick. It actually worked really well! It was a cross between Yan Yan's and peppero!
But when I DO find almond flour, I'm going to give it a try. :]

So almond flour...has NO actual flour in it? You think Trader Joe carries it?

~shortyfrutie77~: Fondant is basically sugar and water and I'm pretty certain that's what samarie used to make her cake decorations. I'm not sure where you can get it (I've tried looking at regular grocery stores already) but here's a recipe for it: http://www.ehow.com/how_2041599_make-fondant.html
I've never made it before so I don't know if it's difficult or easy but tell me how it goes. The recipe and directions look do-able though ^^

~shortyfrutie77~, you can get fondant at Michael's craft store or any specity baking stores. I don't recommend making your own because it's a very tedious job.
Its very easy to mold. Like how you would use extra flour to kneed out dough so that it doesn't stick, use powder sugar. It's best if it's on a cool surface like marble, granit or glass. You use water to stick pieces together, but for the actual cake, you would frost it with buttercream first then put the roll out fondant over the cake.
Tip: When rolling out fondant to put over an entire cake, you want to roll it it double the diameter of the cake and trim the extra off later.
I hope that helps.
