I posted this on another forum, hope you find it helpful:

I have always been intrigued by Indian curry dishes, having tried them in Europe. Tikka Masala and Madras are my personal favorites.

Anyways, I wanted to experiment with making my own version of it. I start with good quality boneless chicken thighs, which I like because they have more flavor and stay tender. I marinate the cut up thigh pieces in a mixture of Japanese soy sauce, Mirin, and toasted sesame oil. Let it sit for approx. 3 hrs.

After marinating, I add a bit of Rub with Love's "Chicken Rub" - this is made by the famous Seattle chef Tom Douglas (great stuff, you can find it at Whole Foods):


I brown the chicken pieces in a pan (I use Safflower oil); as you can see, there are a few Thai chili peppers there for a little extra flavor:



As the chicken starts to brown (inside still raw), I add some sliced Korean King Oyster Mushrooms (optional of course)



Meanwhile, I start heating up my Madras Curry sauce in a pot:



I'm sure if you made it by scratch, it would taste best, but I use British Chef Loyd Grossman's version, and it is pretty darn good IMO - you can check out the ingredients he uses here (no powdered ingredients):

When the chicken is browned sufficiently, I put it in the pot with the warmed up curry sauce, which is now on low heat and simmering:


Add some chopped carrots, mix thoroughly, and cover - simmer for approx. 15-20 mins.


At this time, add in chopped onions, these will cook down in 10-15mins - which is why you don't put them in at the same time as carrots


After the onions are done, I add in some organic green peas (just for color and texture), mix and take off the burner. Let sit (covered) for about 5 mins, and it will be ready to serve.

This thread has swelled since I last dropped by! samarie's still around posting her pretty creations, *waves*. I've had an S/N change, went by the S/N *ayu* and since I haven't posted after the name change, I thought I should now T_T

These pictures would only be familiar with the Singaporeans (probably the Malaysians too), since the stuff I cook are quite culture-specific (I tend to cook stuff that my mom cooks, whereas I bake rather diversely). This is the Indian Rojak, extremely popular with the locals here. Basically, it consists of a whole slew of sides that you dip into a gravy. The main items are deep fried tofu, fritters with prawns/crab meat wrapped inside, and fried, hot-dogs, green salad, fishballs etc. It is rather tedious to make, since there's so many sides to prepare and the gravy takes a long time to simmer dry.gif





This was my dinner just 2 hours ago. lol.

hey soompiers!
i haven't been on in awhile nor did i have time to bake this summer sad.gif BUT i finally did have a slot of time last night to do something new~! Samarie is still posting and her creations are beautiful as ever!!! and there are alot more people making cupcakes now too! they all look reallly yummy! sweatingbullets.gif makes me want one from each smile.gif

i made vanilla cheescake crumb-top cupcake. basically it has a bottom layer of cake, cream cheese filling with a simple crumb top for that extra crunch when you bite into it smile.gif

i made it a little more healthier by topping it with blueberries hehe.

AHH SUKI!! THat looks delicious!!! By any chance have you ever heard of cowboy bread?!?! They use to serve it at school and its sooooo good but I can't find any recipe!! It's like a cinnamon cake?? with a crunchy top like your cupcake!!

^i've made something like that before. i think it was called a crumble cake(?), but i don't have a recipe because someone gave a mix.

I was bored and hungry today. So I decided to cook a bit ;D
We didn't got that many things in our fridge, so it's kinda plain and ordinary (:

It was still rly yummy though~~


I made:


°chicken with beans
°zucchini soup
°eggs with tomato
°...and rice of course!


And remember, I just turned 14 T__T so don'T judge me too harshhhh

OMG Bimbim naengmyung! I love it! I always crave it on a hot day. I want to try making my own. I've had the build your own kit one but it's not the same as you would get in a resturant. But the resturant is so pricey compared to the DIY kit from the market T_T
