as for meatballs, i take about another 1/3lb of meat, season the meat with pepper, minced garlic [just 1 clove is enough] and parmasean cheese. i take little chunks out, make a little hole in the middle and put in a small piece of mozerella in there and cover it up. basically, it's like a cheesy meatball seasoned in more cheese. haha... it might take a few tries to get the meatball seasoned just right for your prefs, but it's totally worth it! if u wanna go one step further, you can crust the meatballs with pankco crumbs and make it sorta like a meatball croquette!!! hehehe

blush.gif I made pumpkin spice cookies for my friend's little sister's birthday. Aliens & Frankensteins decorated with royal frosting, ph34r.gif I'm always iffy about using raw eggs but i found a recipe that cookies the eggwhites to 160 degrees before whipping them. They came out pretty tasty

Making dinner for me & my roommate:

Thit Kho (vietnamese caramelized braised pork except I used stew meat cuz that's all I had)
White rice with lemon pepper seasoning
Salad with italian dressing

Wish I had a picture, but yesterday, me & the bf made lemon pepper/cajun wings, sauteed veggies + eggs! biggrin.gif

for the mini cheesecake:

Ingredients-

-2(8 ounce) packages PHILADELPHIA Cream Cheese, Softened
- 1/2 cup sugar
- 1/2 teaspoon vanilla
- 2 eggs
- 12 (or more if there's left overs from the batter) Nilla Cookies
- Fruit topping of choice (or whatever you like to put on top

Directons-

1. preheat oven to 350 degrees F. Beat cream cheese, sugar,
and vanilla in large bowl with electric mixer on medium until well
blended. Add Eggs, one at a time, beating on low speed after each
additional just until blended.

2. Place 1 cookie in bottom of each 12 medium paper -lined muffin cups. Fill evenly with batter.

3. Bake 20 minutes or until ceneters are almost set. Take it out and let it cool. Then refrigerate 3 hours or overnight (i usually do it overnight)

4. Decorate and serve!

the oreo one is the same just instead of nilla cookies you use oreo cookies XD

Usually when I make thit kho, I use pork, chicken, or fish. This is a first I've heard someone using beef to make it. How did it turn out? laugh.gif

It actually tasted like thit kho, but it was more of a pan-fried porkchop texture.. but not dry and softer because it's supposed to be used for stews lol.

Made a roast - I like bottom round because it is not super-expensive, yet actually has superior flavor than prime rib. The reason is, the fat is better marbled, where as on a rib roast, it just occurs in clumps.

IF you cook a bottom round right and allow the fat to be rendered, the flavor is incredibly good.



Rubbed with olive oil, sea salt & black pepper - then pan sear to get a nice crust on all sides



Transfer to a roasting rack - at this point the meat is still RAW on the inside. Add a bit of steak seasoning rub on the top, and let it slow roast for about 50-60mins (@ 275 degrees)

Pulled it out of the oven


Let it rest for about 10 mins and slice

THANKS!! Do you know any substitutes for nilla wafers...i can't seem to find any in my grocery store

^^ you can try any cookie that would fit the bottom lol, i'm about to try chips ahoy and see if that's good lol or you can crush gram crackers and make it fill the bottom would work as well
