i braised it for a little over an hour in a dutch oven. the braising liquid consists of:
regular soy sauce
dark soy sauce
cinnamon stick
star anise
ginger
garlic
cloves
szechuan peppercorns
scallions
brown sugar
braise it long enough so that a chopstick can pierce the ears. fish it out of the braising liquid and let it cool complete in the fridge. cut into strips then season with cilantro, hot sauce, chopped scallions, chopped garlic, sesame oil, ground szechuan pepper corns, soy sauce and dash of chinese dark vinegar.
