Blueberry-cream cheese cookies with almonds

Ingredients

Dry ingredients

2 cups all-purpose flour
2 tsp baking powder
1/2 tsp salt
1/4 cup powdered skim milk
1 cup sugar
3/4 cup slivered almonds (toasted in a skillet)

1 large egg
1 cup cream cheese; at room temperature, cut in chunks
1 cup unsalted butter, at room temperature
1 1/2 tsp lemon zest
1 cup blueberries (i used frozen ones thawed and drained- sprinkled with a tablespoon of flour so they won't sink at the bottom of the cookie sheet)
--------------------------------------------------------------------------------

Instructions

Sift together flour, baking powder and salt - set aside

Cream butter and cream cheese until blended, about 2 to 3 minutes. Add the lemon zest then blend in sugar and powdered skim milk . Add the flour mixture and mix well. Add the blueberries and almonds last cover with plastic and refrigerate for 2 hours

Preheat oven to 350 degrees. Line your cookie tray with parchment paper then put spoonfuls of dough and bake in the center of your oven for 15 minutes.

Cool on wire racks.

Blueberry Cream Cheese Scones


1/3 cup butter, cut in pieces

Spoon mounds of dough onto an ungreased cookie sheet to make 8 scones. Tuck berries and cream cheese pieces into the dough as much as possible. (Or, for traditional scones, gently pat the dough into a 9-inch circle on the cookie sheet. Sprinkle with sugar (i used Florida crystals but you can also use the regular kind. Cut into 8 wedges, but do not separate.)
Bake for 18 to 20 minutes, until golden. Makes 8 scones.

I've tried making them both in individual and traditional style but i prefer the traditional (as seen on the picture) coz' they look like cookies when baked individually but then it's up to you how you prefer to make them.

helllo~~~

had a bit of time over the break and did some baking with a friend~

made spaghetti & meatball cake~

just piped a bunch of yellow spaghetti coloured buttercream frosting on there and stuck in a gumpaste daisy for a feminine touch topped with ferrero rocher chocolates and a home-made strawberry syrup as the spaghetti sauce.







pathetically made gumpaste fork is stuck in there as a random happy.gif

custard cake i baked a while ago

bottom is yellow cake made of flour, butter, baking soda, baking powder, eggs and buttermilk
top is custard made of egg yolks, condensed milk, half and half and lemon zest with caramel topping

Fried tofu with soy sauce, lemon seasoning, carrots , onions, tomatoes & corn (because corn is awesome)

hahaha! it's reallly goood! althought if you have a piece with fererro rocher then it'll be hard to finish the cake too u'll get too full!

Me & my roommate made dinner couple days ago. Pasta with campbells cream of mushroom, green beans, tomatoes. And then trisquit+provolone cheese+minisausages from costco!




This is a cake I made for my next door neighbors who just came from the hospital bcuz had their first born child! I FINALLY baked the rainbow cake I was dying to bake. I never got to see if it came out successfully on the inside since I didn't see them cut it and eat it but hopefully it came out perfectly layered like a rainbow!

I'm wondering how do you keep your pastry puffs up? D: Since I used to know how to do it, but now, I totally forgot. ;A;
and goshh, they look so good! I should get a piping tip, to have a cleaner look, but I don't. haha.

The secret is how do u bake it..wat I do all the time is i enter the plate the oven with medium heat..(in the middle of the oven).as the oven have like three levels
And I turn on the lower heat only. the oven have two places where the heat comes from. At the top and in the bottom.
Keep looking at themthey will go up..when u see a lil gold color on the bottom of the cream puff turn on the above heat but lower it a lil.wait tell it become gold them it will be done
((( sorry for my language i don't know how to speak english alot i hope u underestanded wat i meant )))

mind u, it does take time lolz!! but again thanx broken.wings for the site =] saved it!! hehe! laugh.gif

Took way longer than expected, But 40 minute later...
EGG TARTS : SUCCESS ! !

not sure how to tastes since its still cooling down, but w00t! xD
