my ultimate paella which is actually tyler's ultimate paella (tyler florence's recipe)

i used medium grain rice instead of long grain, chicken and pork cuts, chorizo de bilbao, shrimps, king crab legs, mussels, mini scallops, lobster tails, with green peas, tomato paste and seasoned with salt, pepper, paprika and saffron




apricot-walnut rugelach

dough is made from all-purpose flour, butter, eggs and cream cheese and filling is apricot preserves with ground walnuts topped with florida crystals

thanks! you bet! and here's the recipe for the biscotti.

Chocolate Dipped Almond Anise Biscotti

Ingredients:

2 1/2 cups flour
1 cup sugar
2 teaspoons baking powder
2 teaspoons Anise Seed
1 cup sliced almonds
1/4 teaspoon salt
3 large eggs
2 teaspoons Vanilla extract
6 ounces (squares) bittersweet or semisweet chocolate
2 teaspoons vegetable oil


Directions:
Preheat oven to 350?F. Grease large cookie sheet. In a large bowl, add first 6 ingredients. Blend, using an electric mixer, on low speed. In a separate bowl, whisk together eggs and Vanilla Extract. With mixer running, slowly pour egg mixture into bowl. Mix just until the dough comes together. Do not overmix.

Divide dough in half and shape each half into a 12 x 2-inch log. Place logs onto cookie sheet. Bake 30 minutes or until slightly risen and firm to touch. Remove cookie sheet from oven. Cool logs on wire rack 15 minutes. Transfer to cutting board. Using a sharp, serrated knife, cut logs diagonally into 1/4-inch slices. Place slices in single layer on ungreased cookie sheet. Bake at 350?F 10-13 minutes or until crisp and golden. Cool on cookie sheet.

Place chocolate and oil in a small microwave-safe bowl, and microwave on high for one minute. Stir, and microwave again for 30 seconds. Microwave for an additional 30 seconds, if needed. The chocolate will retain some of its original shape.

Remove from microwave and stir until completely melted. Dip cooled biscotti into chocolate mixture. Place on plate covered with wax paper and refrigerate until chocolate hardens (about 10 minutes). Store in a covered container.

note: it's just as good even without dipping in chocolate. it becomes even more flavorful the next day because of the anise

Forgot to take pics, but today I made okonomiyaki~
(Which I'm really proud of, considering I like, never cook. xD)

Oh but can someone answer one question for me?
What exactly should the consistency of a fully-cooked okonomiyaki be like?
My mom and I speculate it's 'cause of the water from the cabbage you put in the flour, but when I cook it for how long I was told it comes out like a 3/4-cooked pancake. xD Is that correct or did I eat partially-cooked okonomiyaki? xD?

it's my best friend's bday today... and i slaved away since 9 last night to finish it by noon...

it's a dense strawberry cake that i brushed plentiful with a strawberry simple syrup to keep moist/wet, banana cream filling, french vanilla whipped frosting, and marshmellow fondant.



EVERYTHING from scratch....
oh and please be easy on me... it was my first attempt with fondant..

i came across the recipe for this and baked it for the first time tonight smile.gif

SPAGO'S CHOCOLATE CHIFFON CAKE - majority of the people who tried making it complained about the cake sinking in the middle and the chocolate flavor not being even. mine sunk a little as well and the color is not so chocolatey after taking it out of the pan. the color improved though after i sliced a piece and the grid marks from the rack became sort of a design on the cake laugh.gif i tasted it and it's chocolatey enough, moist but not as moist as when i use buttermilk. not bad but not as good as my other chocolate cakes using my favorite recipes.






recipe update


i drizzled my cake with glaze made from whole milk and confectioner's sugar and brought it to work.... it's all gone as i'm doing this..... my friends at work loved it.... success! the only thing i did differently in the recipe is the use of baker's sugar for the egg whites.

i also realized that the cake didn't look too chocolatey before i sliced it because of the flour that i dusted the baking pan with. laugh.gif

Cupcakes & hot and sour soup. I didn't have the tofu, meat and the other ingredients for the hot and sour soup so i just used eggs and dumplings. haha =X
