Keflets
(Cottage Cheese Cookies)
1 pound margarine (2 cups or 4 sticks)
2 cups cottage cheese (use large curd cottage cheese, not creamed. Drain the cottage cheese for about 1/2 hour)
4 cups sifted flour
Filling:
1 1/2 cups granulated sugar (i mixed mine with a little brown sugar)
2 walnuts
2 cups pitted dates, chopped
1 pound powdered sugar (to roll dough before baking and after)
Filling: walnuts and dates with sugar. Set aside.
Dough: With electric mixer, mix margarine and cottage cheese until creamy. Add flour a little at a time (i added about 2 cups).
Mix in the remaining flour by hand. Roll dough in balls the size of a walnut -- place on cookie sheet. Refrigerate overnight. Roll balls into a thin circle on a board sprinkled with powdered sugar. Drop a teaspoon of filling in the center of each circle; roll tightly. Place on greased cookie sheet and bake 24 minutes at 375 degrees. While still warm, roll in powdered sugar. Yields about 5 dozen.
Note: Use a food processor to grind the nuts and chop the dates. Instead of rolling the dough with a rolling pin, it is easier to use the palm of your hand to flatten the dough into a circle about 31/2 inches wide. Watch the cookies carefully. The recipe calls for baking the cookies for 24 minutes, but mine were done in about 15 minutes. The cookies are done when they're golden brown around the edges.
good luck..... and enjoy the cookies, they're so addictive

Do you eat it warm or cold? I was thinking of making a bento to school, but I wasn't too sure, 'cause the food will turn cold right?

i haven't done that- maybe you can use butter but do not use any other cheese coz' i think it's the cottage cheese that gives the unique flavor and that's why it's called cottage cheese cookies

I am in the middle of school looking at this. You cannot believe how hungry I am right now.
Could I get the recipe?
Ingredients:
1/2 cup vegetable oil
3/4 cup sugar
4 tbs cream cheese
2 eggs
1/2 cup milk
1 tps vanilla extract
1 cups all-purpose flour
1 1/2 tps baking powder
Topping
1/2 cup sliced almond or chopped walnuts
2 tbs brown sugar
2 tbs shredded coconut
1 tps cinnamon
Preparation:
Make topping by combining chopped nuts, sugar, shredded coconut and cinnamon, set aside. In a large mixing bowl, blend in eggs, sugar and vanilla, beat well. After 2-3 minutes add vegetable oil, cream cheese and milk, beat well, then add in the flour and baking powder. Fold mixture together until blended. Pour into pan. Bake for 15 minutes. Gently place crumb mixture evenly on top of partially cooked cake. Return to oven for additional 15 minutes.
enjoy
