you over baked them a little... if you do not want the tops to crack while baking... if your oven has a top heat source, (like mine) you can place a cookie sheet on the top rack to protect the tops from exposure to the top heating element... that way they will not burn or crack... smile.gif

i think so too. coz last time i tested one- it's white on top but still underdone so i kinda strayed a little bit from the kitchen and when i came back they were a bit tanned laugh.gif but thanks for the tip smile.gif

aww i hate to post the latest pics but i have to be honest..... here they are...... i added a little sour cream for more cheesecake flavor but as soon as i opened the oven door to take them out..... they slowly deflated. oh, it's just me and my cousin in our apartment and i usually bring what i cook to work or give them to my friends. i do love to bake and cook- not so much to feast on them but it makes me happy when people appreciate what i cook or bake. smile.gif but this recipe is even harder than a regular sized cheesecake coz i never had deflated cheesecakes waaaaaaaaaaaaaahhhhhhhhhh

You have to bake cheesecakes in a water bath. NY cheesecakes are not really like cakes...they are more like custard so you have to treat them like a custard.

thanks for the tip- i've done regular cheesecakes before in water bath and they came out fine. i did overbeat the batter of the mini cheesecake so they deflated. i just made japanese cheesecake and it's almost done. will post later. dry.gif

JAPANESE CHEESECAKE with STRAWBERRY TOPPING

Ingredients:

• 1 cup cream cheese, at room temperature
• 1/4 Cup whole milk
• 1/2 Cup baker's sugar
• 3 Eggs, separated
• 1/4 Cup cornstarch
• 2 tbsp Lemon juice
• 1/2 tsp Cream of tartar
• 2 1/2 Cups boiling water

Directions:

• Spray a 9-inch cake tin with cooking oil spray.
• Beat cream cheese with milk to soften.
• Add half of the sugar, egg yolks, cornstarch and lemon juice to the beaten cream cheese.
• Beat until smooth.
• Beat egg whites separately, in a medium sized bowl, until fluffy.
• Gradually, add the remaining sugar and the cream of tartar to the egg whites, beating on high speed until soft peaks form (about 8-10 minutes).
• Gradually fold beaten egg whites into the cream cheese mixture, stirring gently.
• Pour into cake pan and smooth the surface.
• Preheat oven to 350 degrees F.
• Place cake pan into a larger roasting pan and place in the lower rack of oven.
• Pour enough boiling water into the roasting pan to come half way up the side of the cake pan.
• Bake for 35-40 minutes. (mine took an hour to bake and i followed your advice to play safe put an aluminum foil tent over the cake on its last 20 minutes of baking)

Strawberry topping :

In a small saucepan, I added 1/4 c water to half a cup of my strawberry preserves to loosen it, stirring constantly and simmer into syrup like consistency. Spread on top of the cake evenly and garnish with a sliced fresh strawberry and a sprig of mint leaves.

thanks! it's very easy, i just microwave it for 30-35 secs, add brown sugar and 2% milk and i usually add berries although it's delicious with just the milk and brown sugar. i use two heaping tablespoons of quick cooking quaker oats and add water enough to cover your oatmeal. microwave ovens vary in temps though so you have to keep an eye on it coz it will overflow once it starts expanding. it will be almost dry so you will loosen it with milk and brown sugar. of course it's much safer if you cook it in the stove but people on the go (and lazy people too - like me ... sometimes laugh.gif ) will just microwave it.

NUTTY BROWNIES

i used all-purpose flour, eggs, 72% dark chocolate, sugar, salt, baking soda, canola margarine, almonds and cashew nuts

penne pasta with italian sausages and four cheeses (cooked this last night for my cousin's pot luck)
penne pasta with sweet and spicy sausages. i used tomato sauce, basil, oregano, sugar, chili flakes, smoked gouda, cheddar, parmesan and mozarella cheese

hmmmmmm yummy!

and here's the recipe

Penne Pasta with Italian Sausage and Cheese

1 tablespoon crushed garlic
1 big chopped onion
½ tablespoon ground pepper
Chili flakes (to taste)
3 cups tomato or traditional pasta sauce
Italian sausages (sweet/spicy/pesto and basil) – sliced thinly (diagonal)
½ cup granulated sugar
1 tbsp butter mixed with a little canola oil to prevent from burning
½ cup grated parmesan cheese
½ cup Velveeta cheese (grated)
¼ cup grated smoked gouda cheese
1 cup Mozzarella cheese
Chopped parsley

Saute garlic and onion in a tablespoon of butter with a little canola. Add the sausage and cook till light brown. Add the tomato sauce, ground pepper, chili flakes and sugar. Simmer for 20 minutes over medium heat constantly stirring. Add the parmesan and smoked gouda cheese (they will thicken the sauce) and continue stirring for two minutes.

Cook the pasta al-dente then sprinkle and toss the grated mozzarella cheese before pouring the sauce. Top with the grated Velveeta cheese and pop in the preheated oven 400 ° for 20 minutes or till the cheese is melted and bubbly. Serve with garlic bread.

Note : you can use Penne pasta or Rogatini

haha i love that it's loaded with nuts too! smile.gif

and for the strawberry pizza i made a crust out of flour, sugar, and butter. the topping is a mixture of cream cheese, cool whip, and sugar, then i simply placed strawberries on top. it was pretty simple, but delicious!

STRAWBERRY PIZZA

Crust:
1 1/2 c. flour (plain)
2/3 c. soft butter
3 tbsp. sugar

Mix together and press onto the bottom of a 10 inch baking or pizza pan. Bake at 375 for 8 minutes.

Topping:
8 oz. cream cheese (softened)
9 oz. Cool Whip
1 c. powdered sugar

Mix cream cheese, Cool Whip and powdered sugar and spread on cooled crust. Top with strawberries and other fruits.

and mitsuki*, can i have the recipe for the orange cake please? thanks!
